Hard and semi-hard cheeses can be frozen for later cooking, but freezing often makes them crumbly or mealy and less suitable for slicing. Wrap them well, freeze portions sized for a future recipe, thaw in the refrigerator, and use them soon. Cream cheese, cottage cheese, and ricotta are poor choices for freezing.
Which cheeses freeze well?
Freezing is most useful when you plan to cook with the cheese rather than serve it in neat slices. Cheddar, Swiss, Parmesan, provolone, and Romano are among the hard or semi-hard varieties that are reasonable candidates. Edam and Muenster are also listed as suitable options in extension guidance. Texture can still suffer: thawed cheese may be crumbly or mealy, even if its flavor remains acceptable.

Brie and Camembert can be frozen, but UC Cooperative Extension describes them as less successful choices than hard cheeses. Cream cheese, cottage cheese, and ricotta do not freeze well, according to the National Center for Home Food Preservation; Nebraska Extension also cautions against freezing cream cheese and cottage cheese.

Block or shredded: choose the form for the recipe
| Form | What to expect | Best fit after thawing |
|---|---|---|
| Block | May become crumbly and harder to slice. | Grating, crumbling, sauces, casseroles, soups, and other cooked dishes. |
| Shredded | Convenient to use in cooked dishes; Nebraska Extension says it can be frozen in its original package. | Pizza, casseroles, sauces, and toppings where the cheese will be cooked. |
If you need cheese for a cheese board or intact slices, freezing is unlikely to preserve the texture you want. For more details on suitable types and packaging, see Nebraska Extension’s freezing guidance.

How to freeze cheese
- Choose the intended use and portion size. Freeze only what you expect to use in one recipe so you can thaw the amount you need.
- Cut blocks into manageable portions. Nebraska Extension suggests half- to one-pound blocks; UC Cooperative Extension recommends chunks of one-half pound or smaller. These are source-specific suggestions, not a single mandatory size.
- Wrap blocks to limit air and moisture loss. The National Center for Home Food Preservation recommends moisture-vapor-resistant packaging. Nebraska Extension suggests wrapping hard or semi-hard cheese in plastic wrap and then placing it in a freezer bag.
- Freeze shredded cheese in its original package when appropriate. This is Nebraska Extension’s advice for shredded cheese.
- Label and date the package. This household organization tip makes it easier to identify the cheese and track how long it has been in the freezer.
How long can cheese stay frozen?
Published freezer times are quality recommendations, not a universal safety deadline. UC Cooperative Extension’s El Dorado County page recommends up to six months for hard cheeses such as Cheddar or block Parmesan and soft cheeses such as Brie or Bel Paese, and no more than three to four months for shredded cheeses such as young Cheddar, Mozzarella, and shredded Parmesan. The page says it was last updated in July 2025, although its page metadata also identifies it as a 2026 page. Treat those periods as that source’s guidance, not a guarantee for every cheese or freezer.
The National Center for Home Food Preservation gives category-specific recommendations in its freezing guide, including six months for soft cheese such as Brie. Follow guidance for the specific cheese and maintain suitable freezer conditions; cheese does not suddenly become unsafe just because a recommended quality period has passed.

How to thaw and use frozen cheese
- Thaw it in the refrigerator. This is the preferred safe method for frozen foods in University of Minnesota Extension’s thawing guidance.
- Allow enough time for shredded cheese. Nebraska Extension recommends 24–48 hours in the refrigerator.
- Use it soon after thawing. Minnesota Extension’s general guidance says refrigerator-thawed foods should be used or cooked within two to three days. That is general food-handling advice, not a cheese-specific shelf-life study; follow any product instructions and discard cheese that shows spoilage.
- Put texture-changed cheese to work in a dish. Use it in sauces, casseroles, soups, or on pizza, or crumble it over a meal. These uses are more forgiving than recipes that depend on clean, intact slices.
Food safety still matters
Freezing does not kill harmful bacteria that may already be present, so it cannot make unsafe cheese safe. Keep cheese properly handled and thaw it in the refrigerator rather than leaving it at room temperature for an extended period. Minnesota Extension identifies 41–135°F as the temperature danger zone in its general food-safety guidance.
