To cut a pineapple with minimal trimming, remove the crown and base, peel it in shallow strips that follow its curve, and pare away individual eyes with small angled cuts. Quarter the peeled fruit lengthwise, then slice the fibrous core off each wedge. This knife-only method works for chunks and wedges; rings can be cored separately with a round cutter.

What you need

  • A sharp kitchen knife and a small paring knife or other pointed tool for the eyes
  • A stable cutting board
  • A produce brush and clean container for storing cut fruit

Wash the whole pineapple under running water with a produce brush, then dry it. Keep your hands, knife, and board clean: a knife can transfer contamination from the rind to the flesh. The University of Delaware Cooperative Extension’s Washing Produce and the University of Minnesota Extension’s Pineapple — Real Life, Good Food recommend washing produce before cutting.

How to peel a pineapple without removing too much flesh

  1. Lay the pineapple on its side and cut off the crown and the base. The two flat ends give you stable surfaces.
  2. Stand the fruit upright on one flat end. Hold it steady and make controlled downward cuts, following the fruit’s natural curve to remove the rind in strips.
  3. Keep the cuts shallow. Flesh close to the rind is edible, so avoid peeling deeply just to make the surface smooth.
  4. Look over the peeled fruit for remaining eyes. Use a paring knife or another pointed tool to remove each one with a small angled cut rather than trimming away a broad layer of flesh.

For a visual of the stable setup and knife cuts, see the Institute of Child Nutrition’s CICN Presents: Knife Skills — How to Cut Pineapple. Food Network also describes removing the eyes individually in its How to Cut a Pineapple guide.

How to remove the core and cut chunks or wedges

  1. Cut the peeled pineapple in half lengthwise, then cut each half lengthwise again to make four quarters.
  2. Lay one quarter on its side. The core is the lighter, firmer, fibrous strip at the center.
  3. Slice lengthwise at an angle just beneath the core to remove it. The Institute of Child Nutrition describes cutting into the wedge at about a 45-degree angle.
  4. Repeat for the other quarters, then cut the trimmed flesh into wedges or bite-size chunks.

Quartering makes the core easy to see and trim from each piece. Mississippi State University Extension’s HappyHealthy Fact Sheet: Pineapple also describes quartering and removing the core before cutting the flesh.

How to cut pineapple rings

For rings, cut the peeled pineapple crosswise into rounds. Press a round cookie cutter through the center of each slice to remove the core. Food Network suggests a cutter 1½–2 inches wide. A dedicated pineapple corer/slicer can also remove the core while making spiral slices, but it is optional; a knife and cutter offer more control over the shapes and how much fruit you trim.

Choosing a method or tool

Option Useful for Trade-off
Knife and quartering Wedges or chunks, with no specialty tool Requires several controlled cuts and trimming the core from each quarter
Round cutter Removing the center from individual rings Useful if you want rings; it does not peel the pineapple
Dedicated corer/slicer People who often want spiral slices with the core removed An optional extra tool to clean and store

The cited sources do not report controlled comparisons of cutting speed or fruit yield, so no method can be said to save a measured amount of pineapple. Choose by the shape you want and how often you prepare it.

Can you use the pineapple core?

The core is tougher and more fibrous than the surrounding flesh, but you do not have to discard it. Food Network suggests grating it into dressing or salsa, freezing chopped pieces for flavored ice cubes, steeping it in drinks, or pureeing it into a marinade. These are culinary options; they do not establish a particular health benefit.

How to store cut pineapple

Put cut fruit in a clean container and refrigerate it promptly. The University of Delaware Cooperative Extension’s Washing Produce, reviewed in August 2025, says cut produce should be eaten within two hours or stored in clean containers in the refrigerator.

For pineapple-specific guidance, Mississippi State University Extension says cut chunks kept in their juices in an airtight container last 5–7 days, and whole pineapple keeps 3 days on the counter or 7 days refrigerated. These are that extension service’s storage recommendations, not a guarantee that fruit will remain good for those exact periods under every condition.

To freeze pineapple, the National Center for Home Food Preservation’s Freezing Pineapple instructions say to peel it, remove the core and eyes, then slice, dice, crush, or cut it into wedges or sticks before packing.
