You can adapt many oven-baked casseroles for a slow cooker, but there is no exact time-and-temperature conversion. Start by reducing most liquids, arranging ingredients by how quickly they cook, and treating any timing chart as a rough estimate. The recipe’s density, portion size, starting temperature, dish shape, and slow cooker all affect when it is done.
How to adapt an oven casserole
- Separate long-cooking ingredients from quick-cooking ones. Use the oven recipe’s ingredients and method as your starting point. Put ingredients that need more time in first; plan to add delicate ingredients near the end.
- Reduce most of the liquid. A general starting point is to use about one-third to one-half less liquid than the oven recipe calls for. Slow cookers retain moisture instead of letting it evaporate as readily as an oven does. Soup recipes are an exception and generally do not need this reduction. For casseroles with grains or ingredients that could scorch, retain enough liquid to cook them properly and adjust cautiously. Mississippi State University Extension and Penn State Extension offer this general liquid guidance.
- Layer for even cooking and avoid overfilling. Put slower-cooking vegetables toward the bottom. FoodSafety.gov advises filling a slow cooker between half and two-thirds full for the slow-cooked meals in its guidance; check your appliance manual for its own capacity and fill recommendations. FoodSafety.gov provides the general guidance.
- Keep the lid on. Lifting it releases heat and extends cooking. Add pasta and grains late in the cycle, or cook them separately and stir them in before serving, since they can become mushy if cooked for the full slow-cooker time. Add dairy during the last hour to help reduce curdling, as advised by Mississippi State University Extension.
- Choose a starting time, then check doneness. Penn State Extension’s example for an oven recipe that cooks for 15–30 minutes is 4–6 hours on Low or 1½–2 hours on High. This is a starting estimate, not a guaranteed conversion. A dense or large casserole may take longer, and results vary by appliance. Follow your recipe and cooker instructions, and verify safe doneness with a food thermometer.
How much liquid should you use?
Begin with roughly one-third to one-half less liquid than the oven recipe specifies, except for soup recipes, which generally do not need the reduction. The right amount depends on what the casserole must do: grains need enough moisture to cook, while a dry mixture may scorch. If you are unsure, make a cautious reduction rather than removing so much liquid that key ingredients cannot cook properly.

How to choose Low or High
Use the setting that fits your schedule and the texture you want. USDA Food Safety and Inspection Service guidance says food cooks faster on High, while Low can suit all-day cooking. Neither setting creates a universal oven-time equivalent, so use a chart only to choose an initial check time and follow your appliance manual. USDA FSIS explains slow-cooker food-safety practices.

A standard round cooker can work for many casseroles if the ingredients fit within the appliance’s fill limits. A casserole-shaped slow cooker may be a better fit for lasagna and other oven-style dishes where shape and presentation matter. Iowa State University Extension says oven casserole recipes can work in these cookers with additional time, but timing varies by manufacturer and appliance; use a tested recipe or the manual rather than assuming a particular number of hours. Iowa State University Extension discusses casserole-shaped cookers.

Food-safety checks that matter
- Thaw meat and poultry before putting them in a slow cooker. USDA FSIS states: “Always thaw meat or poultry before putting it into a slow cooker.”
- Use a food thermometer to check doneness. The University of Maine Cooperative Extension lists 165°F for leftovers and casseroles; for meat components, follow the current safe-temperature guidance for that specific food.
- Keep the cooker covered during cooking and follow the manufacturer’s instructions.
- Reheat leftovers in an oven, microwave, or on the stovetop rather than using the slow cooker to reheat them.
