How to Clean and Sanitize Surfaces After a Recalled Food Spill

If a recalled food may be contaminated with germs, discard it as its recall notice directs, wash affected kitchen surfaces and items with hot soapy water, then sanitize them using the official guidance below. For an undeclared-allergen recall, the instruction is different: wash surfaces the food may have touched with soap and water if it was served.

First confirm the product is part of the recall

Check the notice against the product’s identifying details, such as its brand, name, date code, establishment number, or other identifiers listed in the notice. A recall does not necessarily cover every product of the same general type. See FoodSafety.gov’s Recalls and Outbreaks page for recall information and instructions.

If the item matches, do not eat or open it. Follow the notice for returning or disposing of the product so that no person or animal consumes it. The notice for your exact item takes priority for handling the recalled food.

If the recall is for possible germ contamination

Food recalled because it may be contaminated with germs can leave germs around the kitchen, including on refrigerator drawers and shelves, according to FoodSafety.gov. If the recalled food was stored or prepared in your kitchen, clean the items and surfaces it may have contacted.

  • One-step sanitizer offers powerful germ-kill without harsh chemicals to provide a better overall experience for guests
  • Kills 99.9 percent of viruses and bacteria – including norovirus, E. coli, and Salmonella in 30 seconds, and COVID-19 virus in just 10 seconds
  • Compatible on most hard and soft surfaces, and can be used on food-contact surfaces with no rinse required
  • No harsh chemicals, no precautionary statements, and no hand washing required after use; EPA Design for the Environment certified and fastest overall disinfection times of any DfE product
  • Case includes: 6 PURELL Foodservice Surface Sanitizer, 32 fl oz Capped Bottles with 6 Spray Triggers in Pack
  1. Wash first. Use hot soapy water on affected cookware, utensils—including cutting boards—counters, and refrigerator drawers and shelves.
  2. Then sanitize. FoodSafety.gov’s recall guidance gives this solution: 1 tablespoon of unscented liquid chlorine bleach in 1 gallon of water. Apply it to the relevant surfaces and let them air dry.
  3. Rinse dishes and cookware with the sanitizing solution. This rinse instruction is for dishes and cookware; the guidance does not say to rinse every surface this way.

The cited guidance does not specify a contact or dwell time. Do not assume one; follow the directions for the product you use and the relevant food-safety instructions.

If the recall is for an undeclared allergen

For an undeclared-allergen recall, FoodSafety.gov says that if the product was served, wash with soap and water any surfaces that may have contacted it, including plates, pots and pans, utensils, and counters. The allergen guidance does not give the bleach-solution step described for possible germ contamination, so do not automatically apply that recipe to an allergen recall.

Keep cleaning products off food

This procedure is for surfaces, cookware, and utensils—not produce. Do not wash fresh fruits or vegetables with bleach or other cleaning products. Use the recall notice for the affected food and the official surface-cleaning guidance for the recall reason.
