If you would rather skip tempering, compound coating is easier to handle, but it will not set like properly tempered chocolate. When choosing, prioritize cocoa-butter content and the product’s stated fluidity—not cacao percentage alone.
Which chocolate should you choose?
| Option | Best for | Trade-off |
|---|---|---|
| Couverture wafers or callets | A fluid coating, polished appearance and firm snap, when you can temper the chocolate. | Requires temperature control; it may cost more. Cacao percentage alone does not predict how it flows. |
| Good-quality non-couverture chocolate | Using real chocolate when couverture is unavailable. | It may be less fluid and harder to coat with. King Arthur Baking recommends using the best-quality chocolate available if you cannot find couverture (King Arthur Baking). |
| Compound or confectionery coating | A convenient coating when avoiding tempering is the priority. | It generally uses a hard vegetable fat in place of cocoa butter and does not set as firmly as tempered chocolate (Understanding Ingredients for the Canadian Baker). |
Why couverture works well for coating
Couverture is made for tasks such as dipping and coating. Its higher cocoa-butter content makes it more fluid when melted, so it can cover or drape over food more readily. Cocoa butter also contributes to the shine of properly tempered chocolate. Valrhona explains, “The difference is important because cocoa butter gives the couverture chocolate its shine and fluidity” (Valrhona).

Check the package or manufacturer specifications for cocoa-butter content and fluidity information where available. The word “couverture” can also have a defined regulatory meaning: Understanding Ingredients for the Canadian Baker reports EU criteria of at least 35% total dry cocoa solids, including at least 31% cocoa butter and 2.5% dry non-fat cocoa solids. Valrhona also describes a 31% cocoa-butter minimum for couverture. These figures describe the cited EU criteria and Valrhona’s account; they are not a universal label rule (Understanding Ingredients for the Canadian Baker; Valrhona).
Why cacao percentage does not tell you how fluid chocolate will be
The cacao percentage combines cocoa liquor (cacao solids) and cocoa butter. It does not show how much of each is in the chocolate, and that balance affects how the melted chocolate behaves. Chocolates with the same cacao percentage can therefore have different fluidity. As chocolatier Peter Greweling, CMB, puts it, “The percentage listed on a label describes the portion of the chocolate that came from the cacao tree” but “fails to differentiate” between chocolate liquor and cocoa butter (King Arthur Baking). Use cacao percentage to understand the chocolate’s composition broadly, not as a standalone flow rating.

What tempering changes
Tempering encourages stable cocoa-butter crystals to form as chocolate cools. When done correctly, the coating sets shiny and firm, with a clean snap. Chocolate that is not properly tempered may set with a dull or streaked surface. A dusty or mottled appearance is called bloom; bloomed chocolate is still edible, though its finish is affected (King Arthur Baking).
How to temper chocolate for dipping
The following are King Arthur Baking’s targets for its seeding method. Chocolate type and tempering method can affect temperatures, so follow the product’s instructions if they differ. A digital kitchen thermometer helps monitor the chocolate.

- Melt the chocolate gently. Use the method’s first-melt target and avoid overheating.
- Cool and seed it. Follow the seeding method and cool to the temperature shown for your chocolate.
- Bring it into its working range. Maintain that range while you dip; gentle heat can help if the chocolate cools too far.
- Test the temper. Coat a spoon or another utensil. At normal room temperature, properly tempered chocolate should set in about 3–5 minutes with a shiny surface and no streaks, according to King Arthur Baking.
Prepare for a cleaner, more even coating
- Keep water out of the chocolate; even a small amount can cause it to seize.
- Work in a dry, cool setting, and avoid rushing.
- Keep the food you are dipping close to the working chocolate’s temperature for the best results.
- Choose couverture when fluidity and a tempered finish matter; choose compound coating when skipping tempering matters more. For real chocolate without couverture, use the best-quality option you can find and expect it may be harder to coat with.
