Choose sweet peppers that feel firm and heavy, with smooth, glossy, unbroken skin; a fresh green stem is another useful sign. Keep whole peppers dry and unwashed in the refrigerator crisper, and plan to use them in about five days to a week. Refrigerate cut peppers in a covered container and use them sooner, or freeze extra peppers for longer storage.
How to choose fresh sweet peppers
Look for peppers that are firm, substantial for their size, and smooth-skinned. Glossy, bright color and a fresh-looking green stem are helpful signs, but no single color proves freshness: pepper color varies with maturity.

- Choose peppers with intact, firm skin and no soft patches.
- Avoid wrinkled, dull, cut, broken, or spotted peppers.
- Favor peppers that feel heavy for their size; a fresh green stem is a useful additional cue.
These selection cues are consistent with guidance from Clemson Extension, Purdue Extension, UC San Diego, and the University of Maine Cooperative Extension.
How to store whole peppers in the refrigerator
- Leave peppers unwashed until you are ready to prepare them. Moisture on stored peppers can encourage deterioration.
- Place them dry in a bag or container. A breathable produce bag is one option; UC San Diego lists grocery produce bags and reusable cotton, muslin, or mesh bags as examples.
- Keep the peppers in the refrigerator crisper drawer rather than the coldest area, and inspect them as you use them.
Published recommendations vary: Purdue and Clemson advise about one week, while UMass Amherst, UC San Diego, and Iowa State advise up to five days. Treat five days to a week as practical guidance, not a guaranteed shelf life; freshness when purchased and refrigerator conditions affect how long peppers remain in good condition. Clemson identifies 45°F as ideal and estimates about a week in a typical refrigerator around 40°F, while Iowa State advises avoiding storage below 35°F. Household refrigerator temperatures and drawer conditions differ, so those figures are source-specific guidance rather than a promise of a particular result.

How to store cut peppers
Wash peppers under cool running water before cutting. Refrigerate cut pieces promptly in a covered container. UMass Amherst recommends using them within two days; UC San Diego says up to three days. Because the recommendations differ, use cut peppers promptly rather than treating the longer period as a guarantee.

Freezing is a practical way to keep extra sweet peppers for later cooking. Nebraska Extension says raw sweet peppers can be frozen without blanching. They may lose crispness, so frozen peppers are best suited to cooked dishes rather than uses where a crisp raw texture matters.
