How to Choose a Pumpkin Variety for Size, Carving, or Cooking

Choose a pumpkin by purpose: pie and cooking types for food, carving cultivars for jack-o'-lanterns, and miniature or giant varieties for display. Size ranges vary by extension guide and growing conditions.

Choose a pumpkin for its intended use: a small pie or cooking type such as Small Sugar or New England Pie for food; a carving type such as Howden, Connecticut Field, or Spirit for a jack-o’-lantern; and a miniature or giant cultivar when size is the goal. Extension guides give useful size ranges, but they are regional descriptions—not a guarantee of what any one pumpkin will weigh.

Start with what you plan to do with it

  • Cooking: Look for a pumpkin sold or labeled as a pie or cooking pumpkin. Small Sugar and New England Pie are common choices; Winter Luxury is another cooking type.
  • Carving: Pick a carving variety with enough surface area for your design. Howden, Connecticut Field, and Spirit are examples.
  • Miniature display: Choose a miniature cultivar if you want very small fruit, such as Jack B Little, Wee B Little, Baby Boo, or Baby Bear.
  • Giant display or competition: Look for an Atlantic Giant selection or another cultivar described as a giant, and plan for growing conditions suited to large fruit.

If you are buying a pumpkin rather than growing one, the label and condition of the fruit matter more than the variety name alone. For a recipe, choose one intended for eating; for a design, choose a size that gives you room to cut it.

Which pumpkins are good for cooking?

Small pie and cooking pumpkins are the practical choice for pies and other dishes. Illinois Extension identifies Small Sugar and New England Pie as standard pie types, and lists Winter Luxury as a cooking variety. UF/IFAS also lists pie or cooking options including Cinderella, Triple Treat, Spookie, Cheese, Kentucky Field, and Cushaw.

UConn Extension notes that smaller pumpkins tend to have sweeter, finer flesh. They can work in savory dishes as well as baking, including soups, stews, ravioli, gnocchi, risotto, quick breads, and pancakes. These are general variety descriptions, not the result of a controlled taste ranking; the cited extension sources do not establish a universal “best-tasting” cultivar.

Seed Needs Pumpkin Seeds to Plant Spooky Mix Pumpkins (Bulk)
  • Contents: This mixture of seeds includes more than 7 varieties of Pumpkins. A blend of Jack O' Lantern, Blue Jarrahdale, Atlantic Giant, Fairytale, Small Sugar, Jack Be Little, Cumshaw Green Striped, Connecticut Fields, Cinderella, Howden & more!
  • Harvest: The different varieties of pumpkins grown from this seed mixture will be ready for harvesting from 90 days to 125 days. Placing straw underneath the fruits as they mature can prevent rot.
  • Note: Take note that larger seeds grow larger varieties of Pumpkins and smaller grow medium to miniature sized pumpkins. Smaller seeds produce shorter harvesting dates and vice versa.
  • Quality: All seeds packaged by Seed Needs are intended for the current and the following growing seasons. All seeds are stored in a temperature controlled facility that is free of significant amounts of moisture.
  • Quantity: Seed Needs offers generous quantities. You can share with friends and family, or you can save the extra seeds until the following season, if properly stored.

For one regional reference point, Mississippi State University Extension’s 2025 Mississippi-specific table lists Small Sugar at 5–6 lb and 110 days to harvest. Those figures describe that publication’s guidance for Mississippi, not a guaranteed weight or maturity period in every location.

Which pumpkin is easiest to carve?

For a classic jack-o’-lantern, use a carving type and size it to the design. A simple face can fit on a medium pumpkin; a detailed or oversized design needs more usable surface. If you want to lift the lid by the stem, choose a fruit with a sound, intact stem.

Extension categories vary by source and region. Arkansas Extension places medium jack-o’-lantern types such as Spirit, Autumn Gold, Big Autumn, and Magic Lantern at 10–20 lb, and large types such as Howden and Connecticut Field at 20–40 lb. Illinois Extension describes common intermediate orange pumpkins at 8–15 lb and large types at 15–25 lb; it calls Howden Field an industry-standard carving type. UF/IFAS describes Connecticut Field as the most popular variety used for carving. Treat these as approximate categories rather than exact specifications for an individual pumpkin.

How pumpkin size categories compare

The ranges below summarize extension descriptions. They are not directly interchangeable: publications use different categories, and results depend on cultivar, growing conditions, and region.

The Arkansas publication’s reviewed cultivar table does not display a publication year, and the Illinois page does not display a publication date. Their figures are best read as category guidance, not as current performance guarantees.

When miniature or giant size is the priority

Miniature pumpkins

Arkansas Extension lists Jack B Little, Wee B Little, Baby Boo, and Baby Bear as miniature cultivars at 1 lb or less. Illinois Extension also names ornamental miniatures such as Jack-Be-Little and Munchkin. These are useful for small-scale decoration; choose a different type if cooking quality is the main priority.

Giant pumpkins

Arkansas Extension lists Dill’s Atlantic Giant, Big Moon, Prize Winner, and Big Max in its 100 lb-or-more giant group. Illinois Extension describes jumbo pumpkins as 50–100 lb or much more and notes that true giants generally come from Atlantic Giant selections. A variety name alone cannot promise a particular harvest weight: cultivar choice and suitable growing conditions both matter.

What to compare when buying seeds or choosing a fruit

  • Intended use: cooking, carving, decoration, or growing a giant.
  • Mature size: whether the described range suits your recipe, design, storage, or display space.
  • Flesh and labeling: for food, favor a type identified for cooking rather than assuming a decorative pumpkin will be pleasant to eat.
  • Days to harvest: for growing, check the seed information against the length of your local growing season.
  • Regional fit: use local Extension guidance where possible. The cited recommendations include Mississippi-specific guidance from Mississippi State, Florida recommendations from UF/IFAS, and local food-safety guidance from UC Marin.

Keep carved display pumpkins out of the kitchen

Do not eat a pumpkin after it has been carved and left on display. UConn Extension food-safety educator Diane Wright Hirsch explained in “Pumpkin Season” (October 9, 2015) that a carved display pumpkin should not be eaten because pumpkin is a low-acid vegetable that can support bacterial growth at room temperature or outdoors in warm fall weather. UC Marin Master Gardeners likewise advise against reusing jack-o’-lanterns in recipes. Select and handle a pumpkin as food if you plan to eat it; keep display pumpkins separate.
