For regular use of multiple accounts, separate Chrome profiles are the clearest way to keep browsing data apart.

If Chrome is already signed in to another account, use the profile menu to sign out, then sign in with the account you want. Google’s Chrome sign-in and sign-out instructions also describe a preference for whether signing in to a Google web service should sign you in to Chrome: sign in, don’t sign in, or ask every time.

Google says profiles keep Chrome information such as bookmarks, history, passwords, and settings separate. Google Chrome Help: Manage Chrome with multiple profiles also warns that removing a profile erases its local Chrome data from that computer, so deleting a profile is not a routine account-switching step. Google Workspace likewise recommends profiles to separate work and personal browsing: Use Chrome with multiple accounts.

If Google websites keep selecting the wrong account
Check whether the issue is limited to one Chrome profile or happens in Google’s account chooser across websites. Chrome sign-in associates an account with Chrome; the account chooser decides which signed-in account a Google website uses.
A 2019 answer in the Google Chrome Community says the chooser uses the first account signed in and suggests signing out, then signing back in with the desired account first. This is dated community guidance, not a current, official Google procedure, so it may not fix every case. Separate Chrome profiles can help prevent accounts from crossing over in everyday browsing.
“Default account” is not the same as “default browser”
Setting Chrome as your default browser controls whether links open in Chrome. It does not select the Google Account used by Chrome or by Google websites. Google explains the browser setting in Set Chrome as your default browser.
