Build a gluten-checking progressive web app as a cautious lookup tool, not an authority on whether food is safe: try a barcode lookup against Open Food Facts, use browser-based OCR when there is no useful record, and let people inspect the result. A service worker can keep the app shell and saved records available offline, but it cannot fetch a new product record without a connection.
How should the scan flow work?
Separate the app into four jobs: identify a product, obtain or capture ingredient text, make the result reviewable, and preserve selected app resources for offline use. Keep the user informed about which source produced the text and whether it is current. Do not convert missing or uncertain information into a reassuring safety verdict.

- Accept a barcode or a label photo. Make the two routes visible so a person can switch methods when a barcode is unreadable or a product is not listed.
- Try a barcode lookup first. Request only the product fields the interface needs, such as the ingredient information used for review. Open Food Facts recommends API v3.6 for new integrations and documents product lookup by barcode and a
fieldsparameter. Follow its guidance to use a descriptive User-Agent. Open Food Facts API introduction and Get Product Data. - Use OCR when a useful record is unavailable. Capture the ingredient panel, extract text in the browser, and show that text for correction before using it in any explanation.
- Present a transparent outcome. Distinguish a product record from text read from a photo, and show an unknown or check-the-package state when the available information is incomplete, stale, unclear, or ambiguous.
What can barcode lookup tell you?
A barcode is a route to a product record, not a guarantee that the record is present or correct. Open Food Facts is populated voluntarily and explicitly says it cannot assure that its data is accurate, complete, or reliable. A returned ingredient list can therefore be useful for locating information, but it should not be presented as proof that a package is suitable for a particular person.

If no product is found, or the response lacks the ingredient information needed for review, offer the label-photo route. If the record conflicts with the package or appears incomplete, tell the user to rely on the package and contact the manufacturer when the discrepancy remains unclear. Do not infer a safe result from an absent warning, an empty field, or a failed lookup.

Be considerate of API limits
The Open Food Facts API introduction lists limits of 15 product-read requests per minute per IP and 10 search requests per minute per IP for the specified endpoints. These are service limits, not app-speed figures, and can change; check the current documentation when implementing or operating a client. Avoid unnecessary repeat requests and follow the API’s guidance for bulk usage: API introduction and usage guidance.
How should ingredient-photo OCR be handled?
OCR turns pixels into candidate text; it does not establish that the text was read correctly. Open Food Facts’ ingredient-analysis tutorial states, “The OCR may contain errors,” and recommends human review and correction. Make correction part of the main flow
- Show the extracted text as editable text, not as a hidden intermediate result.
- Make retaking the photo and discarding the OCR result straightforward.
- Keep language or legibility problems visible; do not silently treat partial text as a complete ingredient list.
- Label OCR-derived text separately from information returned by a product record.
On-device OCR is one possible design when it suits the target devices and privacy requirements; the Open Food Facts guidance mentions it as an option, not as a universally faster or more accurate choice. Decide between local and remote recognition based on measured performance on intended devices, network needs, data handling, supported languages, and the correction experience. The available evidence does not establish a generally superior OCR engine or a speed or accuracy figure for packaged-food labels.
What should work offline?
A service worker can cache the app’s pages and other resources and intercept fetches. That can make the interface available when disconnected, but a newly scanned barcode still needs a network lookup unless its record is already stored locally. Make this distinction visible: “app available offline” does not mean “all product data available offline.” MDN explains the service-worker and offline model in its guide to offline and background operation.

Choose a cache strategy by resource

MDN describes cache-first as a way to improve response time that can return stale content, and network-first as prioritizing a fresh response with a cache fallback. Apply the policy per resource rather than treating every item as equally fresh or equally safe. If the app retains product records, indicate when a displayed record was last retrieved if that information is available.
How should the app express uncertainty?
Separate the evidence from the interpretation. A barcode match, OCR text, and a user’s correction are different inputs; none should be silently upgraded into a definitive safety determination. Use an explicit unknown or check-the-package outcome for missing records, incomplete ingredient lists, unclear OCR, conflicting information, or data whose freshness cannot be established.

- Record found: identify it as community-contributed product information and let the user inspect the ingredients.
- OCR completed: identify the text as machine-extracted and require review, especially if the image is blurred, cropped, or multilingual.
- No usable evidence: say that the app could not determine the answer and direct the user to the package or manufacturer.
Do not claim that a barcode or OCR result proves clinical safety or meets a regulatory gluten-free threshold. Labeling rules depend on jurisdiction, and this guide does not establish a country-specific threshold. When a package or record is ambiguous, checking the actual label and contacting the manufacturer are more appropriate than presenting an automated result as certain.

There is no supplied benchmark for this particular app, its barcode flow, or its OCR on target devices, so “fast” is an implementation goal rather than a measured result. Evaluate the parts separately: time to show the cached app shell, time for a connected product lookup, and time from selecting or taking a photo to editable OCR text. Record the device, connection conditions, image characteristics, and language for any reported measurements. Do not use Open Food Facts rate limits as a proxy for response time, or describe OCR as fast or accurate without measurements on the devices the app intends to support.
