Start with medium-roast Robusta and make a slightly weaker brew by using less coffee for the same amount of water. Taste it, then adjust one variable at a time. That can reduce bitterness for many cups, but no brewing recipe can remove it from every bean: Robusta, roast, bean quality, brewing strength and how long coffee is held can all affect bitterness.
Choose the beans before changing your brewing method
Robusta, or Coffea canephora, tends to have more bitter-tasting compounds than Arabica, according to the Specialty Coffee Association (SCA). That tendency is only part of the story. The SCA also identifies immature or defective green beans, roasting, brewing strength and holding brewed coffee as factors that can contribute to bitterness.

If the package states the roast, try medium-roast Robusta before dark-roast beans. In a 2020 sensory study of Ugandan coffees, Robusta samples generally tasted more bitter than Arabica samples, and dark-roast samples generally tasted more bitter than medium-roast samples. The study supports medium roast as a sensible starting point—not a guarantee that every medium roast will taste mild.

Make the first brew slightly weaker
Use a little less coffee while keeping the water amount and brewing method the same. This lowers the drink’s strength, making it a useful first change when the cup tastes too bitter. If you weigh your coffee, a digital scale can make small dose changes repeatable, but it is not required.
The direction is supported by the 2020 Ugandan cold-brew study: samples made with a higher coffee-to-water ratio generally tasted more bitter than those made with a lower ratio. The SCA’s broader brewing guidance also connects brew strength with flavor. These findings describe tendencies, not a rule that every weaker cup will taste better. In particular, a weak but poorly extracted cup may have other unpleasant flavors.

Adjust one brewing variable at a time
Keep the beans, water amount and method constant while you test a change. If you change the dose and temperature together, it becomes difficult to tell which adjustment affected the taste.

Use your usual method and note the amount of coffee and water, plus what tastes bitter to you.
- Reduce the coffee dose slightly. Keep the water amount and other settings the same, then taste the new cup.
- If it is still harsh, test a cooler brew. Keep the dose and method as close to the baseline as possible. Treat this as an experiment rather than a proven Robusta-specific fix.
- Compare and keep the change you prefer. Return to the baseline before testing another variable, or make a fresh baseline cup. A thermometer is optional if you want to repeat a temperature adjustment consistently.
There is no established grind size, brew time or water temperature that is universally best for Robusta in the evidence available here. The SCA summarizes a controlled temperature study that evaluated 87°C, 90°C and 93°C, but those tested temperatures do not establish an ideal Robusta setting. The researchers also adjusted grind and brewing time to reach target strength and extraction, so temperature cannot be treated as an isolated answer for every coffee.

Do not assume one brewing method is least bitter
Choose a method based on whether you want a hot drink or cold brew and how easily you can control its strength and brewing conditions. The 2020 Ugandan study found that roast, coffee-to-water ratio and brewing method affected sensory attributes, with interactions among the coffee and brewing conditions. It does not support a universal ranking in which one method always produces the least bitter Robusta.
If you want to compare methods, use the same beans and aim for a similar beverage strength in each. Make small batches, taste them side by side if practical, and choose the cup you prefer. The evidence does not establish a winning technique or particle size for Dampit Robusta: the available record of a study on that coffee does not provide findings sufficient to name one.

Serve the coffee fresh
Drink the coffee soon after brewing rather than leaving it hot for a long time. The SCA lists holding brewed coffee over time as a way bitter flavors can develop. Milk or sugar can also balance perceived bitterness if that suits your taste, but the evidence here does not establish a particular addition or amount as a brewing fix.
What the Robusta evidence can—and cannot—tell you
The most directly relevant sensory work, by Anderson and colleagues in 2020, evaluated four Ugandan coffee samples from lowland and mountainous regions, including Robusta and Arabica. A trained panel assessed 42 sensory attributes. The authors reported that roast degree, coffee-to-water ratio and brewing method affected many attributes, and that their effects could interact.

Those study-design details do not supply a universal dose, grind, brewing time or method for all Robusta. SCA guidance helps explain why strength, extraction and temperature can affect coffee, but it is general brewing evidence rather than a Robusta-specific recipe. Use the findings to guide small, controlled taste tests—not to chase a single target setting.
