You can boil water in a microwave, but it may become superheated and erupt when moved or when something is added. Use a microwave-safe, heatproof glass vessel with sloping sides, take care when heating and handling it, and do not rely on a universal time: microwave ovens heat at different rates.
Why microwave-heated water can erupt
Water can become hotter than its conventional boiling temperature without appearing to boil at the surface. USDA Food Safety and Inspection Service (FSIS) explains that this superheating can occur in a very clean vessel or when room-temperature water is microwaved. Internal hot spots can allow heat to build below the surface. If the water is disturbed or an ingredient is added, it may erupt into a violent boil-over. FSIS describes this as extremely unlikely, but says it can cause a problem. (USDA FSIS, “Cooking with Microwave Ovens,” updated June 27, 2024.)

Choose a suitable vessel
Use cookware made or labeled for microwave use. FSIS recommends a vessel with sloping walls, such as a measuring cup, and lists heatproof glass as suitable cookware. A microwave-safe glass measuring cup with sloping sides is a practical choice if you have one. Check its microwave-use labeling and follow the maker’s instructions; a microwave-safe spoon is another precaution FSIS names. Neither item is essential if you already have suitable cookware.

Pour the amount of water you need into a microwave-safe, heatproof vessel with sloping walls. Do not use a container unless it is labeled or made for microwave use.

As precautions, FSIS suggests leaving a microwave-safe spoon in the vessel and stirring occasionally. It also suggests adding a pinch of instant coffee, a tea bag, or gelatin at the beginning or halfway through heating. These are precautions, not guarantees that eruption cannot occur.

Heat the water while observing it through the microwave window. There is no single safe heating duration for every oven: higher-wattage microwaves heat faster, and performance varies by appliance.

When heating is complete, avoid shaking or jostling the vessel. Move and use the hot water carefully, since disturbing superheated water can trigger an eruption.

Why there is no universal heating time
A microwave’s wattage affects how quickly it heats water, so a time that works in one oven may not be appropriate for another. FSIS provides a time-to-boil test to estimate oven wattage: measure one cup of water in a two-cup glass measure, chill it with ice, remove the ice and excess water, then observe how quickly it boils during a high-power test. Follow the complete FSIS instructions if you use this test. It estimates wattage; it is not a universal recipe for safely boiling a cup of water.
