To change or remove one, edit the text in that area or choose Options > Remove header. Headers work in pages format, not pageless format, so the document’s layout matters if a header seems missing.
Add or edit a header on a computer

Open the document and choose Insert > Page elements > Header.

Remove a header on a computer

Double-click the header area.

Click Options, then choose Remove header.
If the document has section breaks, check which section you are editing so you remove the header from the intended section.
Use different headers for pages or sections
Give the first page its own header
Click in the header and select Different first page. This lets the first page use a distinct header from the rest of the document.
Make a section’s header independent
By default, a section can use the previous section’s header. In the section you want to change, uncheck Link to previous before editing its header.

Alternate odd- and even-page headers
Click in the header, open Options, set the application scope, select Different odd and even, and apply the change.
Adjust the header space
To change the space reserved for the header, choose Format > Headers & footers > More options. Choose whether the setting applies to a section or the whole document, change the margin, and apply it. Google says setting the margin to zero removes the header or footer space; it is a spacing setting, distinct from the computer’s Options > Remove header command.

Open More and turn on Print layout.

Google’s iOS instructions also require pages format and Print layout: open the document in the Docs app, tap Edit, open More, turn on Print Layout, then tap the header area and type. Google’s cited iOS help does not establish platform-specific removal controls here, so use the documented computer steps above to remove a header.

The document is pageless. Headers and footers are available in pages format, not pageless format. A header already in the document will not be visible after switching to pageless. Check Google’s explanation of pages and pageless setup and switch to pages format if you need a header.

Print layout is off on mobile. Enable it from the app’s More menu to work with page headers.

You are editing a different section than intended. Check section breaks and Link to previous; a section linked to its predecessor can share that header.
