The official Pokédex entry for Mew lists it as National Pokédex #0151, a Psychic-type Pokémon in the “New Species” category, with gender unknown. It describes Mew as a species profile, not a census, and does not state how many Mew exist.

Does Pokémon confirm that there is only one Mew?
No population total—one or otherwise—is established by the official sources cited here. The Pokédex entry does not say that Mew is unique, and its “New Species” category is a classification, not a numerical count. Calling Mew rare or mythical would not, by itself, prove how many exist.
Why do some game counts seem to give a different answer?
Pokémon’s Let’s Go completion guidance is about finishing a particular game’s Pokédex, not counting Mew in the fictional universe. It says the first 150 Pokémon, from Bulbasaur through Mewtwo, are needed for that tally; Mew, Meltan, and Melmetal do not count toward its final total. That rule explains a game-completion number, not a lore population.

Does the Poké Ball Plus transfer limit mean there is one Mew?
No. Pokémon Support says a Mew from Poké Ball Plus can be transferred one time into a single compatible copy of Pokémon: Let’s Go, Pikachu! or Pokémon: Let’s Go, Eevee!; after transfer, that Mew is no longer available on the accessory for another transfer. This is a limit on moving the accessory’s Mew into a game, not evidence about the number of Mew in the story. See Pokémon Support’s transfer instructions.

Do Mew trading cards reveal how many exist?
No. Pokémon’s product page for the Mythical Pokémon Collection—Mew describes a trading-card product launched on February 22, 2016, with a full-art promo card, collector’s pin, two Generations booster packs, and an online code card. A product featuring Mew is not a count of Mew in the Pokémon universe, and that launch date does not establish current availability.
