How Hand-Shaken Peptides Formed Unusually Stable Emulsions

Researchers found that brief hand shaking could prompt peptide derivatives to form a nanoscale interfacial network that helped stabilize an emulsion.

A brief hand-shake helped researchers discover a way for small peptide derivatives to stabilize an emulsion: the molecules assembled into a nanoscale network at the boundary between two liquids. Chemistry World reported that the resulting droplets resisted merging and that study leader Rein Ulijn said the emulsions remained stable for months. This was a laboratory observation, not a household recipe or a demonstrated commercial product.

What happened when the researchers shook the liquids?

The observation came during research into peptide gelation in organic solvents. In the 2014 account, researcher Shuo Bai added chloroform—an organic solvent that does not mix with water—to a hot buffer containing dissolved peptide gelators. After about five seconds of hand shaking, an emulsion formed. The brief description captures the accidental discovery; it is not a complete or reproducible laboratory protocol.

An emulsion consists of droplets of one liquid dispersed through another. Because the liquids tend to separate, the droplets can merge, or coalesce, over time. The researchers’ finding was that peptide-derived material assembled where the two liquids met and helped keep the droplets from coalescing.

How did the peptide network stabilize the droplets?

The proposed explanation is the structure formed at the liquid–liquid interface. Chemistry World described conventional emulsifiers as forming a single layer of amphiphilic molecules—molecules with parts that interact differently with water and oil. In the reported peptide system, derivatives instead formed a nanoscale network at the interface, incorporating hydrogen bonds. That network acted as a barrier between droplets, making it harder for them to merge.

The distinction is architectural, not a demonstrated numerical performance comparison. The news account reports no side-by-side measurements against a conventional emulsifier, nor does it establish that peptide networks outperform standard emulsifiers under all conditions.

What stability did the study report?

Ulijn, who led the study, said: “These emulsions remain stable for months, clearly demonstrating that nanostructured peptide layers provide an excellent barrier to prevent coalescence.” This is the researchers’ observation as quoted in a 2014 news report, not a guaranteed shelf life for other formulations. The report does not give a precise duration, test conditions, replicate count or a comparable stability figure for a conventional emulsifier.

How does this approach compare with conventional emulsifiers?

Question Reported peptide-derived system Conventional emulsifiers in the report
Interfacial structure Nanoscale peptide-derivative network incorporating hydrogen bonds Single layer of amphiphilic molecules
Stability evidence Ulijn reported stability for months; precise test conditions and duration were not stated in the news account No side-by-side numerical comparator was given in the news account
Ways to tune properties The report says changing amino-acid sequences could tune properties; it does not identify a best formulation for a specific use Not stated in the news account
Readiness and biocompatibility Potential uses were exploratory, and the synthetic aromatic ligands raised concerns for some food and biomedical applications Not assessed in the news account

Could these emulsions be used in food, cosmetics or medicine?

The report suggested possible applications in foods, cosmetics, catalysts and controlled release of active ingredients such as fragrances or drugs. These were proposed opportunities for further investigation, not evidence of commercial products, clinical use or approval.

The materials described contained synthetic aromatic ligands. Ulijn said these might limit use in some food and biomedical applications and that the group was investigating structural changes to improve biocompatibility. The 2014 report does not establish that this limitation was later resolved. Delft University of Technology soft-matter researcher Jan van Esch suggested that such emulsions might be tuned to interact with cells, tissues or other biological systems; that was a prospective assessment, not validation of a medical application.

What is established—and what remains unclear?

The account establishes the broad discovery and its proposed mechanism, but it does not provide enough experimental detail to reproduce the work or judge which formulation would suit a particular application. The underlying study is S. Bai et al., “Stable emulsions formed by self-assembly of interfacial networks of dipeptide derivatives,” published in ACS Nano in 2014 (DOI: 10.1021/nn501909j). The University of Freiburg’s publication list identifies the paper and authors. Exact peptide sequences, concentrations, phase ratios, replicate counts and quantitative stability data are not established by the cited news account.
