Food-truck technology should solve specific operating problems: taking orders and payments, getting tickets to the kitchen, helping customers find current menu and pickup information, and supporting safe operations. A point-of-sale (POS) system is often the operational hub, but a kitchen display, website, loyalty program, or portable terminal is useful only when it fits the truck’s workflow. Requirements and connectivity vary, so choose tools around your menu, service setup, and local rules—not a generic must-have list.
Start with the jobs your technology needs to do
Map the path from a customer’s order to its handoff. During a rush, staff may need to enter orders quickly, take payment, send the ticket to the cooking area, and tell customers where or when to collect food. After service, the operator may need sales reports or inventory information. A tool is worth considering when it makes one of those jobs clearer or easier without adding friction.

- Order and payment: enter menu items, handle payment, and keep the checkout process workable in a compact service area.
- Kitchen coordination: ensure staff preparing food can see or receive each order.
- Customer information: communicate the menu, ordering options, and pickup details.
- Operations and safety: account for power, equipment placement, fire protection, and the rules that apply to the truck and location.
Not every truck needs a separate system for each job. The right setup depends on how orders arrive, how many staff handle them, and whether service is stationary, mobile, or a mix.
Choose a POS and payment setup for the service flow
A POS can bring order entry and payment acceptance together, and some configurations also support reporting, inventory functions, or online ordering. The exact capabilities depend on the provider and setup. Square’s food-truck materials describe these types of features, but they are vendor descriptions—not independent comparative testing. See Square’s food-truck POS overview for its example.

- Accept all major credit and debit cards and pay one low rate with no hidden fees and no long-term contracts.
- Process chip cards in just two seconds.
- Get your money as soon as the next business day.
- Use it cordlessly with the built-in battery, designed to last all day.
Compare the workflow, not just the device
Before choosing a POS, consider how staff will use it at the service window and during a rush. Check that the menu and order flow fit the way the truck sells food, including any customizations or order types the operation relies on. Confirm which payment methods the provider supports and whether the setup can connect to the kitchen tools or reports the operator actually needs.
- Portable or fixed: decide whether staff need to carry a device to customers or can operate from a fixed checkout point.
- Connectivity: verify what happens when the internet connection drops and what limitations apply to any offline payment feature.
- Reporting and inventory: confirm that the available functions match the level of tracking the business needs.
- Integration: check how orders move to kitchen displays or other systems, rather than assuming tools work together.
- Total cost: review current provider terms against the truck’s actual hardware, transactions, and usage. There is no universal cost winner established by the available sources.
Treat offline payments as a risk decision
Some POS providers describe offline payment acceptance, but it is not equivalent to a guaranteed successful payment. Square says its offline payments have limitations, including a 24-hour reconnection condition; the operator bears the risk of offline payments that expire, are declined, or are disputed. Check the provider’s current documentation and terms before relying on this feature, and make a plan for what staff should do when service or connectivity is interrupted. The 24-hour condition is specific to Square’s described terms, not a general rule for POS systems.

Consider a portable POS terminal when staff need mobility
A portable payment terminal can let staff take orders and payments away from a fixed checkout point. Square describes its Handheld as a mobile device for orders, payments, and inventory management. That is an example of the category, not a claim that it is the best device or that it is available through a particular retailer. Read Square’s Handheld product information for the vendor’s current description.

A device carried to customers may be useful for a truck with a line or a service area that extends beyond the window; a fixed terminal may be simpler when all orders and payments happen in one place. Check portability, supported payment methods, menu workflow, connection behavior, and compatibility with other tools before choosing.

Move orders to the kitchen clearly
A kitchen display system can show or route order tickets to the people preparing food. It may reduce the need to relay orders verbally or manage paper tickets, but whether it helps depends on the layout, staffing, and order volume. Square identifies kitchen display systems as one possible food-truck technology category; that is not evidence that every truck needs one. See its food-truck equipment guide for this and other example categories.
Consider a display when orders are difficult to hear, tickets are easy to lose, or several people need to track work in progress. Before adopting one, confirm how the system receives orders, whether it works with the chosen POS, and whether the device can be placed safely and practically in the truck’s kitchen environment.

Give customers useful menu and pickup information
A website or online ordering page can communicate the menu and pickup information. It can be particularly useful when customers need to check offerings before reaching the truck, but the page must reflect the way the business actually operates. If the truck changes location or menu, stale details can confuse customers; decide how those updates will be maintained.

Marketing software and loyalty features are additional options for communicating with returning customers. They are not prerequisites for operating a truck, and their value depends on whether the business has a practical way to use them and customers who want that communication. Square’s equipment guide lists websites, marketing software, and loyalty tools as possible categories, not universal requirements.

Plan power and fire safety alongside technology
POS devices, displays, and other equipment must fit the truck’s power setup and working environment. Consider power needs and placement as part of the equipment plan, and do not let cords or devices interfere with staff movement, cooking, or safe access to equipment. Square’s equipment guide discusses power needs and fire extinguishers as part of a broader checklist; use it as a category guide, not as a substitute for applicable safety requirements.
The National Fire Protection Association publishes truck-specific fire-safety guidance that addresses permits, fuel sources, fire protection, clearances, and operating practices. Its guidance is an orientation, not a universal permit checklist: requirements depend on the authority and location. Check the current guidance at the NFPA food-truck safety fact sheet, then confirm requirements for the exact vehicle and operating location with the relevant local fire authority.
Food-safety rules also vary by jurisdiction. The U.S. Food and Drug Administration says the Food Code is a model that state, local, tribal, and federal regulators use to develop or update retail food-safety rules; it does not mean every jurisdiction has identical requirements. The FDA page reports the 2026 Food Code, but operators need to confirm which version and provisions their jurisdiction has adopted with the relevant health department. See the FDA Food Code page.
Quick Recap
Use a short decision checklist before buying
- Trace the order: write down how customers order, pay, and receive food during both a typical service and a rush.
- Identify the bottleneck: decide whether the main issue is checkout, payment mobility, kitchen ticket handling, or customer information.
- Check fit and connection limits: verify device portability, workflow, integrations, and documented offline behavior with the provider.
- Review cost and upkeep: check current provider terms and account for the equipment and services the truck will actually use.
- Confirm safe operation and local rules: make sure power, placement, permits, fire protection, and food-safety requirements fit the truck and its operating locations.
