Choose enameled cast iron if you often cook acidic dishes or long simmers and want to skip seasoning; choose bare, seasoned cast iron if you want a versatile surface for searing, roasting, baking, or outdoor cooking and are prepared to dry and maintain it.
What is the difference between enameled and bare cast iron?
Both start with cast iron, but their cooking surfaces and care needs differ. Enameled cast iron has a smooth porcelain coating bonded to the iron. Bare cast iron is protected by seasoning: a layer of carbonized oil formed through polymerization that also contributes to its easy-release surface. Lodge’s enameled care guide and cast-iron product guide describe these distinctions.

- Enameled: no seasoning is required, but the coating needs protection from scratches, impact, and sudden temperature changes.
- Bare, seasoned: seasoning is part of the working surface, so cleaning, prompt drying, and seasoning maintenance are part of ownership.
Which is better for acidic foods and long simmers?
Enameled cast iron is the more straightforward choice for recipes with tomato, wine, or other acidic ingredients, especially when they cook for a long time. Lodge says well-seasoned bare cast iron can handle short acidic cooking, but prolonged contact may affect seasoning or flavor. Its May 9, 2023 guidance advises against leaving acidic ingredients in bare iron for more than about 45 minutes and recommends enamel for an all-day simmer or roast. That is Lodge’s general care advice, not a universal tested cutoff. Read Lodge’s acidic-food guidance.

Enameled cast iron
You do not need to season an enameled pan. Protect the coating by heating it gradually, avoiding empty stovetop preheating, and using oil or liquid as directed by its manufacturer. Lodge recommends wooden, silicone, or nylon utensils for its enamel cookware. Avoid thermal shock, scratching, and hard impacts; Le Creuset warns that dropping or knocking its cookware against a hard surface may damage it. Lodge’s care instructions and Le Creuset’s care-and-use guide provide brand-specific directions. Check the instructions for your exact item, since limits and features vary by product.

Bare, seasoned cast iron
Clean it after cooking, dry it promptly, and maintain the seasoning layer to help prevent rust. Seasoning is not a separate coating you can ignore: it is the protective cooking surface that needs care over time. See Lodge’s cast-iron product guide for its care guidance.
