The Academy says other peanut and nut butters can be stored in the pantry or refrigerator. For a particular product, the manufacturer’s directions take precedence over this general guidance.

How long does fresh-ground peanut butter last?
There is no established government shelf-life covering every fresh-ground nut butter. USDA’s Food Safety and Inspection Service lists peanut butter generally as a pantry-stable food and gives pantry durations of six to nine months unopened and two to three months opened. Those figures are guidance for peanut butter generally, not a tested guarantee for every fresh-ground product, nut, mill, or batch. Why does natural peanut butter separate?
Oil separation can be normal in non-stabilized nut butter. USDA’s commercial item description distinguishes stabilized and non-stabilized nut butters: stabilized products should not show noticeable oil separation, while non-stabilized products may have separated oil that needs mixing. How can you handle nut butter safely?
The FDA advises keeping the refrigerator at or below 40°F (4°C). Its room-temperature limit—no more than two hours, or one hour when the air temperature is above 90°F (32°C)—applies to foods that require refrigeration. The FDA does not classify every fresh-ground nut butter as requiring refrigeration, so do not treat those limits as a product-specific shelf-life. How can you tell if nut butter has gone bad?
Discard nut butter if you see mold. But smell and appearance are not reliable safety tests: FDA cautions that food can make people sick even when it does not look, smell, or taste spoiled.
