Choose Docling when you need document parsing to run locally, including in private or air-gapped environments, and want a structured document model with flexible export options. Choose Unstructured’s hosted workflow when you want provider-run processing that can combine parsing with chunking, enrichment, embeddings, and remote data connectors. Neither is a universal winner: test both against representative files and compare output quality, throughput, operational work, and total cost.
How Docling and Unstructured differ
Both tools process documents for use in downstream applications, but they emphasize different parts of the workflow. Docling is an open-source toolkit for converting a range of document formats into a unified representation and structured exports. Unstructured offers open-source processing components as well as hosted API workflows for partitioning documents and preparing results for retrieval and storage.

| Consideration | Docling | Unstructured |
|---|---|---|
| Where it runs | Can run locally; private and air-gapped deployment options are described in the project deployment documentation. Local throughput depends on the machine and its operator. | The hosted workflow API uses Unstructured-hosted compute. Its ingestion tooling also documents local file processing; confirm that the specific path and capabilities you need are local. |
| Primary workflow emphasis | Document conversion into a structured model and exports such as Markdown, HTML, and JSON. | Partitioning plus optional chunking, enrichment, embeddings, batch processing, and delivery to storage or retrieval systems. |
| Formats and outputs | The project lists PDF, Office formats, HTML, EPUB, images, audio, video, email, and more, with multiple structured output choices. | Input and output support depends on document type and processing path. Check the current document-type and API documentation for the formats and representations your workflow requires. |
| License and terms | The repository identifies Docling as MIT-licensed; check current project materials for implementation details. | Verify the license for each open-source component and the commercial terms for any hosted service or plan you use. |
For current deployment choices, consult the Docling deployment documentation and the Unstructured workflow API overview. Those details can vary by version, service, and plan.
When Docling is the better fit
You need local, private, or offline processing
Docling can run on your own machine or infrastructure, which may suit sensitive documents or environments that cannot send files to an external processing service. Its deployment documentation describes offline use after required models have been cached. Initial model downloads need network access, and local speed depends on available hardware. With private or on-premises deployment, your organization takes responsibility for operating and maintaining the infrastructure.

Review the actual configuration and applicable provider terms before sending sensitive documents to any hosted deployment. The deployment choice determines who processes the files and which retention and processing boundaries apply.
You want a structured document representation and varied exports
Docling’s repository describes support for PDF, DOCX, PPTX, XLSX, HTML, EPUB, images, audio such as WAV and MP3, WebVTT, email, XML schemas, video, and additional formats. Listed exports include Markdown, HTML, WebVTT, DocLang, DocTags, and lossless JSON. Its project materials describe capabilities for page layout, reading order, tables, code, formulas, and image classification, alongside OCR and local execution. These are project-maintained capabilities, so check the documentation for the release you intend to deploy.
An independent Docling format guide describes 23 input formats and nine output formats; those counts are from that guide, not the official repository, and the page does not state a publication date. For technical background, the authors’ Docling technical report identifies DocLayNet for layout analysis and TableFormer for table recognition. Its description of commodity-hardware operation is not a performance guarantee for every current version or device.

- WORKS YOUR WAY – Use the Brother free iPrint&Scan desktop app for scanning to multiple “Scan-to” destinations like PC, Network, cloud services, Email and OCR. (2) Supports Windows, Mac and Linux and TWAIN/WIA for PC/ICA for Mac/SANE drivers. (3)
- OPTIMIZE IMAGES AND TEXT – Automatic color detection/adjustment, image rotation (PC only), bleed through prevention/background removal, text enhancement, color drop to enhance scans. Software suite includes document management and OCR software. (4)
Your PDFs include both text and scans
OCR is not automatically required for every PDF. Docling.org’s format guide says, “OCR is optional and only needed for scans or PDFs without a text layer.” A PDF with selectable text can often be processed without OCR; scanned pages and embedded images rely on OCR quality. The same guide says TableFormer-based table reconstruction applies to structured inputs and PDFs, while scans depend on OCR. Treat these statements as guidance from that independent guide and verify results on your own files.
See the Docling format reference for its format and OCR notes.
When Unstructured is the better fit
You want parsing and downstream preparation in one hosted workflow
Unstructured’s workflow API is designed to combine partitioning, chunking, embedding, and enrichment, and to process batches from remote locations before sending results to storage, databases, or vector stores. The hosted workflow runs on Unstructured-hosted compute. That can reduce the need to assemble and operate separate processing stages, but it also means evaluating the service’s terms, data handling, limits, and cost for your use case.

- SIMPLE FILE MANAGEMENT — Scanner allows the creation of searchable PDFs with Optical Character Recognition (OCR) and convert scans to editable Word or Excel files effortlessly; Designed for home and office document scanning
Its chunking documentation explains that partitioning first identifies structural elements; chunking then combines or splits those elements according to a chosen strategy and size. A page describing a legacy endpoint lists basic, by-title, by-page, and by-similarity strategies and recommends on-demand jobs for production-level use, batch processing of multiple local files, newer models, enrichments, chunking strategies, and embeddings. Because that page refers to a legacy endpoint, check the current chunking documentation before implementing against specific options.

You need to preserve table content as HTML
Unstructured documents a text_as_html metadata field on an element for extracting an HTML representation of table content. Support depends on document type; consult its document-type table rather than assuming every input produces equivalent table HTML. The HTML output documentation explains the field.
You are considering Unstructured but do not necessarily need hosted processing
Unstructured’s ingestion documentation distinguishes local file processing from routing partitioning through an API: its documented local mode does not require an API key or URL. That is a separate path from the hosted workflow API, not evidence that every hosted workflow feature is available locally. Confirm the exact tool, feature set, plan, and terms that match your deployment.

How to interpret Unstructured’s benchmark
Unstructured reports evaluating a real-world enterprise dataset of over 1,000 pages, including scanned invoices, complex layouts, nested tables, handwritten notes, and industry-specific formats. In the comparison displayed on its benchmark page, it reports a score of 0.880 for Adjusted CCT and 0.820 for table cell-level content accuracy; it also reports 0.574 for Element Alignment and 0.813 for table cell-level spatial accuracy.
These are vendor-reported results for the named evaluation and metrics, not an independent ranking or a general accuracy rate. They do not establish which parser will perform better on your files. Treat the Unstructured benchmark as a description of that evaluation, then test the tools on a workload-matched sample.
How to choose for your workload
Before committing, define what “good parsing” means for the application that will consume the output. A tool that returns readable text may still fail if it loses table relationships, reading order, or fields your downstream system expects.

- Specify the required output. Decide whether downstream systems need Markdown, structured JSON, HTML tables, chunks, or particular fields. Check support for each input-and-output combination in the current documentation.
- Run the same files through the intended deployment paths. Compare local processing with the hosted workflow only where those are the options you would actually use. Record configuration and versions so the comparison is reproducible.
- Inspect errors and structure, not just extracted text. Check reading order, missing or misread content, table cells, OCR on scans, and whether output structure survives the handoff to your application.
- Measure operational fit and total cost. Track throughput, model and runtime requirements, hosted request limits, error handling, infrastructure work, and applicable service costs at your expected volume.
- Verify terms before production. Check the current license for each component and the applicable commercial service, data handling, and retention terms for the exact deployment.
The available documentation does not establish workload-independent accuracy or total cost for a particular organization. The right choice depends on the files, output requirements, deployment constraints, and volume you actually have.
Sources and version-sensitive details
Docling’s project repository describes its supported capabilities and identifies its MIT license; its deployment guide covers local, hosted, and private options. Unstructured’s API and ingestion documentation describe distinct hosted and local processing paths. Format parity and license boundaries across every component, release, and commercial tier are not established by those general descriptions, so confirm the details in current documentation and applicable terms before implementation.
