Did Tomatoes Once Taste Like Cucumbers? What the Evidence Says

A wild tomato relative contains C9 aldehydes associated with cucumber-like flavor. That finding is not proof that cultivated tomatoes once tasted like cucumbers.

Not in the sense that cultivated tomatoes used to taste like cucumbers. The claim traces to a wild tomato relative, Solanum pennellii, whose fruit contains C9 aldehydes associated with cucumber-like flavor. The distinction matters: the source describes a flavor clue in a related wild plant, not a documented change in the taste of ordinary tomatoes over time.

Where the cucumber comparison comes from

A 2007 Tomato Genetics Resource Center page at UC Davis summarizes a Chemistry World article by Bea Perks. It says fruit of Solanum pennellii, a wild tomato relative, contains C9 aldehydes associated with cucumber-like flavor, while those compounds are absent in cultivated tomato. The UC Davis page was updated in 2023.

The summary identifies the compounds only as a class; it gives neither individual aldehyde names nor their amounts. It also does not establish that cultivated tomatoes once tasted like cucumbers and then lost that flavor. The headline is best understood as a comparison between related plants and their volatile chemistry, not as a record of cultivated tomato flavor changing through history.

Did modern tomatoes lose flavor?

That is a related question, but it is not what the cucumber finding demonstrates. A 2017 study record describes modern commercial tomato varieties as substantially less flavorful than heirlooms and outlines chemical and genetic information that could help breeders improve flavor. It is a comparative finding, not a rule that every heirloom tastes better than every commercial tomato. The PubMed record for “A chemical genetic roadmap to improved tomato flavor” provides the study reference.

Breeding has to balance flavor with other priorities, including yield, disease resistance, appearance and shelf life. That helps explain why flavor improvement is a breeding challenge; it does not show that every modern variety has the same flavor deficit or that a single cucumber-like compound would restore the taste people want.

Why tomato flavor is more than one aroma compound

Tomato flavor emerges from a combination of sugars, acids and volatile aroma compounds. Volatiles can contribute fresh, green, fruity or other notes, but no single one accounts for the whole tomato flavor profile. A University of Florida overview of tasting and breeding work describes that interplay, while a 2022 Florida report discusses nitrogen-containing aroma compounds and a biochemical pathway involving five such compounds.

Knowing how particular aroma compounds are made can give breeders a target. As Denise Tieman, a University of Florida research assistant professor of horticultural sciences, put it: “Now that we know how these compounds are made in tomatoes, we can identify varieties that have the heirloom version of the enzyme and high levels of these flavor compounds, and we can breed this trait into modern tomatoes to improve flavor.” That is a route toward improving selected flavor traits, not evidence that the C9 aldehydes in S. pennellii are the same compounds studied in this work. University of Florida’s 2022 report explains the pathway.

What newer genetics adds—and what it does not

A University of Georgia report published September 24, 2026, summarizes research on 558 tomato varieties and wild relatives. The study identified 337 significant genetic associations tied to sugars, acids and flavor compounds, and highlighted Sl-LIP100 as one gene involved in producing compounds associated with fresh, green and fruity notes.

  • Premium Cherokee Purple Tomato Seeds: Authentic Open-Pollinated Premium Heirloom Seeds (USA) Non-GMO, Untreated, High Germination Rate. Legendary indeterminate variety. Complex smoky-purple color. Vintage umami flavor. Record fleshiness of giant fruits. Prolonged vegetation cycle.
  • Centuries-Old Cherokee Heritage. In global rankings, one of the most awarded dark tomato varieties. A recognized favorite in American tastings. Its profile is unique: a complex balance of high natural sugars and natural acids. A unique palette with a pronounced natural smoky umami.
  • Sommelier Palette. Oblate, large, heavy fruits fascinate with complex transitions of deep shades: from dusty pink and matte burgundy-brown at the base to olive-green "shoulders" near the stem. The smoky tomato declares its aristocratic origin right on the vine.
  • Marble Flesh. Extremely high dry matter content and minimal volume of chaotic seed chambers filled with dense emerald-green jelly. Velvety crimson flesh: meaty, sugary, incredibly tender—free of tough white veins or a fibrous center. The monolithic structure does not bleed juice under the knife, yet melts in the mouth, releasing an avalanche of flavor.
  • Smoky Umami. Sugar-spice balance. Enveloping flavor profile. A balanced, concentrated essence where intense sweetness gives way to a refreshing fruity acidity. An aftertaste with spicy, smoky umami notes. This is not just the "taste of childhood"—it is a multi-layered delicacy for true gourmets.

This is useful context for how researchers map flavor traits, but it is separate from the 2007 cucumber-associated C9 aldehyde story. As UGA professor Esther van der Knaap noted, “What may be good tasting to humans may not be relevant in wild relatives.” She also stressed the limits of any one finding: “Flavor is extremely complex. This gene, the Sl-LIP100, is only one part of a huge puzzle.” UGA’s report describes the study and its results.

Can gardeners grow a cucumber-flavored tomato?

The cited material does not establish that a cultivated tomato variety or a packet of heirloom seeds will produce cucumber-flavored fruit, nor that backyard growers can reproduce S. pennellii by planting ordinary tomato seed. Heirloom tomatoes do offer a way to explore a wide range of tomato flavors, but heirlooms vary: open-pollinated seed can produce offspring like the parent when cross-pollination is prevented, and some heirlooms can be less reliable or disease resistant than hybrids. UC Agriculture and Natural Resources’ guide to heirloom tomatoes discusses those trade-offs.
