For a coating that sets with sheen and a clean texture, the chocolate type matters less than tempering it to the right working temperature for its brand.
How the three types compare for dipping
| Chocolate | Flavor and appearance | Guittard working temperature | Best fit |
|---|---|---|---|
| Dark | More pronounced cocoa flavor; creates a strong contrast with sweet fruit or fillings. | 88–90°F (31–32°C) | When you want the chocolate flavor to stand out. |
| Milk | Sweeter and creamier. | 86–88°F (30–31°C) | When you prefer a familiar, sweeter coating. |
| White | Mild and sweet, with a pale base for decoration. | 86–88°F (30–31°C) | When appearance or a mild chocolate flavor is the priority. |
The temperatures are Guittard’s working targets for its method, not universal settings for every chocolate. Follow the curve provided by your chocolate’s manufacturer or packaging. The available guidance does not establish that one type sets faster, produces a thicker shell, or lasts longer across brands and recipes.

Choose chocolate that suits the coating
For a fluid shell that you plan to temper, couverture is a practical starting point. Valrhona describes couverture as having more cocoa butter than standard bars; its richer cocoa-butter content can help with fluidity, but couverture products do not all behave identically. Choose a product intended for melting and dipping, and use its own tempering instructions.

Temper it for sheen and a clean finish
Tempering uses controlled cooling and agitation to form stable cocoa-butter crystals. This helps dipped chocolate set with an attractive sheen and stable texture. Guittard provides both seeding and tabling methods, along with type-specific working temperatures; use the method that fits your equipment and keep the chocolate within the appropriate range while dipping.
If using Guittard’s tabling method, its guide describes a simple test: dip a scraper into the chocolate. It should begin setting within two minutes and show uniform sheen. A thermometer can help you monitor the working temperature, but follow the maker’s directions for your particular chocolate.

Prepare dipped strawberries properly
For strawberries, start with dry, room-temperature fruit. Hotel Chocolat warns that cold fruit moisture can cause chocolate to seize. Hold each berry by its stem while dipping, or use a clean dipping fork for small confections and other pieces. Keep water away from the melted chocolate.
What to pick
- Pick dark for a more pronounced cocoa flavor and contrast against a sweet center.
- Pick milk for a sweeter, creamier coating.
- Pick white for a mild, sweet coating or a pale background for decoration.
These are flavor and presentation preferences, not a ranking from a controlled taste test. For good setting and sheen, use the correct tempering curve for your chocolate rather than assuming dark, milk, and white share one temperature.
