Coffee Species vs. Varieties vs. Roast Levels: What the Labels Mean

Species identifies the coffee plant, variety names a type within it, and roast level describes how the beans were roasted. Here's how to read all three on a bag.

Species tells you what kind of coffee plant produced the beans; variety names a type within that species; roast level describes how the harvested and processed beans were roasted. They answer different questions, so a bag can accurately say “Arabica, Gesha, light roast.”

What each term means

Species: the kind of coffee plant

A species is a botanical classification. The two coffee species in wide cultivation are Coffea arabica (Arabica) and Coffea canephora (commonly called Robusta). The National Coffee Association also identifies Arabica and Robusta as the two most common coffee plant species. National Coffee Association: Beans; World Coffee Research: What’s included.

Variety: a type within a species

A variety is a distinct type within a species. Bourbon and Gesha, for example, are named Arabica varieties; World Coffee Research’s catalog also includes varieties or cultivars within Robusta. Its formal variety criteria draw on distinctness, uniformity, and stability, although the catalog notes that some regionally important entries do not meet all of those criteria.

In coffee writing, cultivar is often used much like variety, though technical sources may distinguish them. The International Trade Centre’s Coffee Guide describes a cultivar as a result of genetic improvement and uses varietal for a specific instance of a variety. Usage is not perfectly consistent across the industry, so a consumer-facing label may not follow that distinction precisely. International Trade Centre: The Coffee Guide, Fourth Edition.

Roast level: how the beans were roasted

Roast level is a treatment applied after coffee cherries have been harvested and their seeds extracted and dried. Roasting turns green coffee into the roasted beans used for brewing. Light, medium, and dark are common broad categories; they do not identify a plant species or variety. National Coffee Association: Beans.

How the labels fit together

On a bag marked “Arabica, Gesha, light roast,” each term supplies a different piece of information:

  • Arabica: species.
  • Gesha: named variety within Arabica.
  • Light roast: roast treatment.

Other useful label details—such as origin, processing method, and roast date—answer still different questions. Species and variety refer to the plant material; roast and processing describe what happened to the coffee after it was grown and harvested. A variety name alone does not guarantee one flavor across every growing region or brewing method.

What roast labels can and cannot tell you

Roast level can help set flavor expectations, but the names are not all equally standardized. Light, medium, and dark are familiar broad categories; labels such as French, Italian, and Full City may be used flexibly by different roasters. The Specialty Coffee Association describes roast-level naming as variable and lists its SCA-131 Coffee Roast Level: Test Method as in development on its standards page when accessed. Check the standards page for its current status. Specialty Coffee Association: Coffee Decoded; SCA Standards.

Roast is a useful clue, not a complete flavor prediction. In a study of drip-brewed coffee, roast level was the strongest driver among the sensory variables examined; that finding applies to the study’s design, not every coffee or preparation method. Specialty Coffee Association: Coffee Decoded.

  1. Choose bags that clearly identify the species and, where available, the variety.
  2. Keep roast level, roast freshness, and brewing method as similar as possible.
  3. Compare the coffees using the same water, dose, grind, and brew approach.
  4. Then compare coffees with different roast levels while keeping the species, variety, and preparation as similar as possible.

This approach helps you separate label dimensions; it does not establish that one species, variety, or roast is objectively best. World Coffee Research estimates that Robusta accounts for approximately 40% of global coffee production; the catalog does not assign a publication year to that figure.
