Not directly: ordinary leavened bread is not a demonstrated battery or practical energy-storage method. Research does show two narrower connections: baker’s yeast has been tested in engineered bioelectrochemical devices, and fermented wheat dough has been turned into carbon material used in a battery electrode. In both cases, the energy technology is the engineered device or processed material—not bread itself.
What bread leavening has to do with energy
Leavening is the fermentation process in which yeast acts on sugars in dough. Energy-storage studies involving yeast use that biology as part of a designed electrochemical system, or use fermented dough as a starting material for carbon processing. Neither pathway shows that a loaf stores electricity.

It helps to distinguish two kinds of bioelectrochemical device:
- A microbial fuel cell uses microbial activity and an engineered cell to convert biochemical energy into electrical output.
- A rechargeable microbial battery stores energy in chemical intermediates and later recovers some of it as electricity. It is not the same as simply generating voltage while microbes consume fuel.
Electrodes, electrolytes, mediators, membranes, and other components are essential to the reported systems.

Three research paths—and what each demonstrates
| Path | What handles the energy | Reported result | What the result does not establish |
|---|---|---|---|
| Yeast bio-battery, 2024 | Saccharomyces cerevisiae in a device with recyclable PET carbon electrodes, an iota-carrageenan hydrogel, and potassium ferricyanide as a redox mediator. | The study reports a steady 450 mV for this lab device. | Voltage alone does not show how much energy the device can store or deliver, or whether it is commercially useful. |
| Yeast microbial fuel-cell experiment | Baker’s yeast in a student-research microbial fuel-cell setup. | The University of British Columbia project reports measurable voltage over an extended period. Higher initial yeast concentration raised maximum voltage; more sugar extended the duration of sustained voltage. | The project proposes further testing, including current and/or power measurements. It is not evidence of an effective consumer battery. |
| Fermented-dough-derived battery material, 2018 | Carbon nanotubes produced using yeast-fermented wheat dough scaffolds, then used as a sulfur host in a lithium-sulfur battery cathode. | The paper reports approximately 450 mAh/g after 1,500 cycles at a 1C charge/discharge rate for the tested cell system. | This capacity belongs to the battery system using processed dough-derived material—not to bread, dough, or yeast. |
These metrics describe different things: millivolts measure electrical potential, while mAh/g expresses capacity relative to mass. They cannot be treated as competing measurements of the same performance.
What a rechargeable microbial battery adds
A 2016 proof-of-concept combined microbial electrosynthesis with a microbial fuel cell, using acetate as the main energy carrier. The University of Groningen research portal reports an energy density of about 0.1 kWh/m³, a full-cycle energy efficiency of 30–40%, and nominal discharge power of 190 W/m³. The figures are normalized to anode electrolyte volume or anode volume as specified in the reported abstract; they describe this particular early system, not a general performance level for yeast devices.

In duplicate runs, the system showed stable performance for 15 days. That is a limited demonstration of operation, not evidence of long-term durability in practical deployment.
Why these results are not a practical bread battery
The 2025 review in ACS Energy Letters considers bioelectrochemical systems—including biobatteries, biosupercapacitors, and microbial or enzymatic fuel cells—as possible approaches to energy conversion and storage. It identifies competitive energy density and long-term stability as continuing challenges compared with traditional accumulators.
Rank #3
- Highly stable and valued for its consistent performance since 1945
- The 2024 yeast study reports a voltage, but voltage alone does not establish stored energy or useful output.
- The fuel-cell experiment demonstrates measurable electrical behavior in a student research setup; it does not establish consumer-scale power or capacity.
- The dough-derived material was extensively processed into a component for a lithium-sulfur battery cathode. Its relevance is as electrode material, not as food storing energy.
- The rechargeable microbial-battery figures come from one early proof-of-concept and should not be generalized to other designs.
Can you use baker’s yeast for an educational experiment?
Baker’s yeast is used in student and research demonstrations of microbial fuel cells, so it can be an accessible biological input for an educational investigation. Such a demonstration explores bioelectrochemical energy conversion; it should not be presented as a way to make a useful standalone battery from household bread ingredients. The cited student project also points to measuring current and/or power as important next steps beyond observing voltage.
