Arabica usually tastes softer and sweeter, with more perceived acidity; Robusta tends to taste stronger, more bitter, and fuller-bodied, and its beans generally contain more caffeine. Those are species-level tendencies, not guarantees about every cup. Neither species is automatically better: cultivar, growing conditions, processing, roast, freshness, and brewing all shape the result, and high-quality Robusta exists.
Arabica vs. Robusta at a glance
| What you notice | Arabica (Coffea arabica) | Robusta (Coffea canephora) |
|---|---|---|
| Typical flavor | Often sweeter and softer, with notes described as sugar, fruit, chocolate, or berries. | Often stronger, harsher, more bitter, and fuller-bodied. |
| Perceived acidity | Generally higher; sometimes described as wine-like. | Generally lower, but it is not accurate to say Robusta has no acidity. |
| Caffeine | Less caffeine in the beans than Robusta, in the ICO’s comparison. | The ICO’s 2020 report says Robusta beans contain roughly twice as much caffeine as Arabica beans. |
| Quality | Not inherently better because it is Arabica; growing and preparation matter. | Not inherently inferior: quality Robusta exists and is used in espresso and blends. |
These are broad comparisons, not a guarantee for a particular bag. World Coffee Research identifies the two as distinct species and documents many Arabica cultivars as well as substantial genetic diversity among Robusta coffees. A species label alone cannot describe every lot’s flavor. World Coffee Research’s coffee varieties catalog

Which has more caffeine, Arabica or Robusta?
Robusta beans generally have more caffeine. The International Coffee Organization’s Coffee Development Report 2020 describes Robusta as containing roughly twice as much caffeine as Arabica beans. That is a relative comparison of beans, not a universal caffeine amount for a brewed cup. The sources do not establish a standard milligram figure for a serving, so the species comparison should not be turned into a precise estimate for your mug. Does Robusta taste more bitter?
Typically, yes: the ICO characterizes Robusta as stronger, harsher, and more bitter, while Arabica tends to be sweeter and softer. But taste depends on more than species. Cultivar, growing environment, harvest, processing, roast, freshness, and brewing can all affect the cup; a particular Arabica may not match the usual profile, and a well-produced Robusta need not taste harsh. The ICO also notes that high-quality Robusta is used in espresso and blends. International Coffee Organization quality guidance

Is Arabica coffee more acidic?
Arabica generally has more perceived acidity, which the ICO describes as sometimes wine-like. In coffee tasting, “acidity” means a sensory contribution to flavor; it is not simply another word for sourness, a single pH reading, or a claim about heartburn. Organic acids can contribute to aroma, bitterness, mouthfeel, and astringency as well as sourness.
A Specialty Coffee Association interview about a review of coffee-acid literature explains why a simple species rule has limits: results vary with the samples, roast levels, extraction and analytical methods, and there is no universal definition for roast level across the studies. The review found species differences most apparent among organic acids; Robusta organic-acid amounts increased with progressive roasting, while chlorogenic-acid differences were less pronounced and roast level had a larger effect on their concentrations than species. This does not support a universal acidity score for either coffee. Specialty Coffee Association interview with coffee scientist Sara Yeager

Is Arabica inherently better than Robusta?
No. Arabica is often treated as a premium shorthand and Robusta is sometimes dismissed as cheap or harsh, but species alone does not determine quality. The ICO says coffee quality is subjective and shaped across the production chain, including bean type, environment, harvest date, roast, freshness, and brewing. It also explicitly recognizes high-quality Robusta. The useful question is which coffee is well-produced and suits your preferences, not which species name sounds more prestigious.

Which one should you choose?
- Choose Arabica to explore if you tend to like softer, sweeter, more aromatic cups or enjoy perceived acidity.
- Try Robusta if you want a stronger, more bitter, fuller-bodied profile or are comparing beans with relatively higher caffeine.
- Consider a blend if you want to see how a roaster balances flavor and body; Robusta is used in some espresso blends, though this is not a rule for every blend.
For a fair comparison, look for the species or blend disclosure, origin, processing, roast date, and roaster’s tasting notes. Brew both coffees in the same way and compare aroma and taste side by side; ICO guidance identifies freshness and brewing as important to quality, and describes cupping as a blind assessment of taste and aroma. If a bag only says “coffee” or gives no useful lot details, its species and expected cup profile may be difficult to judge.
