For Navratri farali snacks, an air fryer is the better fit when you want to use less oil and can cook in small batches; deep frying is the better fit when you prefer its distinct browned, crisp result and can manage hot oil carefully. Air frying can make several familiar vrat-style snacks, but it will not reproduce deep-fried texture exactly, and the method alone does not make every snack healthy.
How the two methods cook farali snacks
An air fryer is essentially a small convection oven: a heating element warms the air and a fan moves it around food in a perforated basket. Hong Kong’s Centre for Food Safety explains the mechanism in its air-fryer guidance. Deep frying, by contrast, immerses food in hot oil. That difference affects oil use, texture, and how closely you need to watch the cooking.

The ICMR-National Institute of Nutrition’s 2024 Dietary Guidelines for Indians state that air frying significantly decreases the amount of oil absorbed into foods compared with deep frying. This supports a general comparison, not an exact oil, calorie, or nutrition figure for every recipe.
Air fryer vs deep frying: what changes?
| Consideration | Air fryer | Deep frying |
|---|---|---|
| Oil absorbed | Generally less oil is absorbed than with deep frying, according to the ICMR-NIN 2024 guidelines. The amount depends on the recipe and ingredients. | Food cooks immersed in oil and generally absorbs more than an air-fried version; the actual amount varies by recipe and technique. |
| Texture and browning | Moving hot air can brown surfaces. The result is different from immersion frying, and may need a light brush or spray of oil. | Immersion in hot oil produces a distinct crisp, browned result. It is not established that air-fried versions of these snacks match it. |
| Batch size | Works best when pieces have space for air to circulate. Overlapping or overcrowding can interfere with cooking, so larger quantities may mean multiple batches. | Capacity depends on the pan or fryer and how much food can be fried safely at once; the cited guidance does not specify a batch size. |
| Hands-on care | Avoid overloading, turn food where needed, and cook it thoroughly without using excessively high temperatures or unnecessarily long cooking times. | Requires attention to hot oil, temperature, and safe handling. Oil should not be heated for too long or reused for frying. |
There is no established independent head-to-head taste test or recipe-by-recipe oil-absorption measurement for the farali snacks discussed here. Treat the comparison as guidance for choosing a method, not a promise of identical results.

Which farali snacks can you air fry?
KENT’s Navratri recipe article lists air-fryer adaptations for several familiar options: sabudana tikki, kuttu pakoras, samak cutlets, vrat-style aloo tikki, and arbi chips. These are manufacturer recipe suggestions, not independent tests, and individual mixtures can behave differently.
- Sabudana tikki: A plausible air-fryer candidate, with a small amount of oil potentially helping the surface brown. Haier also publishes a hot-air sabudana tikki recipe.
- Kuttu pakoras and samak cutlets: KENT includes both as air-fryer adaptations. Shape pieces consistently and leave room around them so air can circulate.
- Vrat-style aloo tikki and arbi chips: These also appear in KENT’s list; follow a recipe suited to your appliance rather than assuming one temperature and time work for all models.
KENT recommends similarly sized pieces, turning food midway where needed, and using the temperature advised for the specific appliance. Some mixtures benefit from a light oil brush or spray, so air frying should not be described as universally oil-free. KENT’s article also claims “up to 80% less oil” for its own air-fryer products; that is a manufacturer claim, not a result established for all appliances, snacks, or comparisons.

Air-fry for airflow; deep-fry with temperature and oil care
For an air fryer
- Arrange pieces in a single layer without overlap; cook in batches if the basket is crowded.
- Turn items when the recipe or appliance instructions call for it, and make sure the food is cooked through.
- For starchy foods, aim for golden brown rather than very dark. The Centre for Food Safety advises against excessively high temperatures and unnecessarily long cooking.
For deep frying
- The Hong Kong Centre for Food Safety gives 150–180°C as a frying range in its March 2024 guidance. It notes that oil that is too cool can increase oil absorption.
- Manage hot oil carefully and avoid heating it for too long. FSSAI’s Eat Right India guidance says, “Do not reheat the oil or re-use the same oil for frying.”
- FSSAI separately says that vegetable oil beyond 25 percent total polar compounds should not be used; its page describes monitoring requirements for food business operators. This is not a household measurement requirement.
Check ingredients against your own Navratri observance
Farali rules vary among families and communities. Before cooking, check the ingredients and seasonings in a recipe—including flours, salt, spices, and oil—against the practice you follow. A recipe labelled “vrat” or “farali” is not a universal guarantee that every ingredient suits every household’s observance.
