These 12 casserole ideas cover cheesy chicken and broccoli, layered enchiladas, chicken Divan, rice and pasta bakes, pot pie, and overnight breakfast dishes. “Make ahead” means different things for each recipe: some are assembled before baking, while others are baked first and then chilled or frozen. Check the recipe’s own storage and reheating directions rather than assuming every casserole freezes well.

1. Chicken, broccoli and cheese casserole
A familiar combination of chicken, broccoli and a creamy, cheesy sauce makes this a hearty dinner option. Food Network Kitchen’s recipe serves six, takes two hours total, and uses a 3-quart flameproof casserole dish. Its make-ahead note is specific: freeze the baked casserole for up to two weeks, then reheat it covered at 350°F for 35 to 45 minutes. See the Chicken Broccoli and Cheese Casserole recipe.
2. Chicken Divan
Chicken Divan pairs chicken and broccoli with a rich sauce and a baked topping. Nancy Fuller’s Food Network recipe says it can be frozen for up to one month and should be thawed overnight in the refrigerator before reheating. For individual portions, the recipe also suggests baking it in ramekins. See Food Network’s Chicken Divan Casserole recipe.

See the Enchilada Lasagna Bake recipe.

Chicken noodle casserole brings pasta, chicken and a creamy sauce together in a familiar one-dish dinner. It is a useful direction if you want a pasta-based option; check the recipe you choose for whether it recommends assembling ahead, baking ahead, or freezing.
5. Chicken-and-rice casserole
Rice makes a chicken casserole feel substantial without relying on noodles or tortillas. Look for a recipe that specifies whether the rice is cooked before it goes into the dish and how the casserole should be stored and reheated, since those details vary by recipe.

First decide what kind of work you want to do early. Assembly-ahead recipes may need a fresh bake at dinner, while bake-ahead recipes shift the oven work to another day. Freezing is a separate choice: use it only when the recipe gives directions for freezing and reheating.
- For a specified freezer plan: Chicken and broccoli with cheese has a recipe-specific note to freeze after baking for up to two weeks; Chicken Divan has a one-month freeze note and calls for overnight refrigerator thawing.
- For a larger gathering: The enchilada lasagna recipe makes about 12 servings and gives its own refrigerator and freezer make-ahead guidance.
- For breakfast: Strata and French-toast casseroles can be assembled overnight when the chosen recipe calls for it.
- For a different base: Use pasta, rice, potatoes, squash, tortillas, or bread to vary the meal rather than making every casserole a chicken bake.
Food Network’s casserole recipe collection includes chicken, broccoli, breakfast, potato, rice and squash categories for further ideas. The collection is inspiration, not a substitute for checking an individual recipe’s storage instructions.

Store and reheat casseroles safely
USDA Food Safety and Inspection Service (FSIS) guidance says to refrigerate leftovers within two hours, or within one hour when the room temperature is above 90°F. Leftovers generally keep for 3 to 4 days in the refrigerator or 3 to 4 months in the freezer; those are storage recommendations, not a guarantee that every casserole will retain its best texture for the full period. USDA FSIS: Leftovers and Food Safety.
Reheat casseroles and other leftovers to an internal temperature of 165°F, checking the center with a food thermometer. USDA FSIS lists 165°F as the minimum internal temperature for casseroles and reheated leftovers. USDA FSIS: Keep Food Safe! Food Safety Basics.
USDA FSIS says frozen leftovers can be reheated without thawing in an oven or microwave, although they take longer. Follow the recipe and the container maker’s oven-use instructions. Do not thaw a casserole on the counter; thaw it in the refrigerator when the recipe calls for thawing. USDA FSIS: Can you reheat leftovers without thawing them first?
