A sharp, thin espresso often points to under-extraction; a harsh, lingering bitterness often points to over-extraction or a shot that is too restricted. Neither taste is a diagnosis by itself. Start by weighing the coffee and espresso, noting the shot time and flow, then change one variable at a time. If a shot tastes sour and bitter together, check puck preparation before chasing the grind.
What sourness and bitterness can tell you
Sour, sharp, or thin
Sourness commonly suggests under-extraction: the water may not have drawn enough balancing flavors from the coffee. A fast, pale, watery-looking flow can support that explanation. Flair Espresso Help Center says a sour taste is “typically” indicative of an under-extraction, while noting that roast affects solubility: lighter roasts are typically less soluble than darker ones. Flair’s explanation of espresso extraction is a useful starting point, not proof that every bright-tasting shot is faulty. Acidity can be a desirable part of a light roast; adjust toward the flavor you prefer rather than trying to remove all brightness.

Harsh, lingering, or astringent
Strong, lingering bitterness commonly points to over-extraction, or to excessive restriction that makes the shot run very slowly. A grind that is too fine is one possible cause. Roast character and personal preference matter too, so bitterness alone does not establish what went wrong.

Mixed sourness and bitterness can be a sign of uneven water flow through the coffee puck: some areas may be extracted more than others. Clumps, uneven distribution, or an unlevel tamp are worth checking. Inconsistent particle size is another possible contributor, according to Clive Coffee’s troubleshooting guide. These clues do not prove channeling, so repeat the same recipe after improving preparation and see whether the result changes.

Measure a shot before changing it
Record the dry coffee dose, espresso yield by weight, shot time, and what the flow looks like. A scale lets you compare shots more reliably than cup volume alone. Lavazza’s guide uses an 18 g dose and 36 g yield, with 28 seconds as an example in range. Clive Coffee gives 18 g in, 36 g out, and 25–30 seconds as a starting point. These are examples from their respective guides, not universal rules: basket size, coffee, and equipment vary.
Lavazza’s timing landmarks are also specific to its example: it says first drops should appear after 5–8 seconds, considers a 36 g yield in 18 seconds too fast, and a yield not reached by 35 seconds too slow. Use timing to help interpret flow, not as a substitute for taste or as a standard that every machine must meet. Lavazza’s practical rule is: “Always change one variable at a time.” See its espresso extraction guide.

Fix the shot with controlled adjustments
If the shot tastes sour and runs fast
- Keep the dose and target yield the same, then move the grinder a small step finer.
- Pull another shot and compare its flow, time, and taste. If it is still sharp but flow and timing are reasonable, check puck distribution and machine temperature rather than repeatedly changing grind.
- Check the dose and yield against the basket and coffee you are using. A too-short extraction or low dose can contribute to sourness, but change only one of these at a time so you can identify the effect.
If the shot tastes bitter and runs very slowly
- Hold dose and yield steady, then move the grinder a small step coarser.
- Pull another shot and compare. If flow is reasonable but the taste remains harsh, try a slightly shorter yield or a small temperature reduction, one adjustment at a time.
If taste is off but flow is reasonable
Grind may not be the only variable. For sourness, Lavazza suggests raising brew temperature by 2–3 degrees when shot time is already in range. For bitterness, it suggests lowering temperature by 2–3 degrees or using a slightly shorter yield when appropriate. These are vendor suggestions, not universal prescriptions; consult your machine manual and make small changes. Seattle Coffee Gear lists 195–205°F as an ideal temperature range in its guide, but that figure is its recommendation, not a rule for every machine or roast. Its espresso troubleshooting guide also names temperature, dose, grind, very fresh coffee, and rancid oil residue as possible contributors.

When sour and bitter show up together, reset puck preparation
- Start with a dry basket and distribute the grounds evenly.
- If the grounds are clumped, break them up before tamping. Lavazza identifies a WDT tool as one possible aid for this.
- Tamp level, then repeat the same dose, yield, and grind setting.
- Watch for uneven flow or spraying and compare the taste with the previous shot.
This reset tests whether preparation may be contributing; it cannot by itself confirm channeling. Keeping the recipe fixed makes the comparison more useful.

Check beans and cleaning before buying equipment
Roast, freshness, and preference
Roast character may simply not suit your taste: a bright light roast can taste acidic by design, while a darker roast may emphasize more soluble flavors. Very fresh coffee may still be releasing gas, and older coffee can behave differently. The cited guidance does not establish a single rest period that applies to every coffee, so judge the beans by their behavior and flavor rather than relying on a universal cutoff.
Oil residue and routine cleaning
Coffee oils left on the basket or portafilter can contribute stale, harsh flavors. Clean those parts and follow the machine maker’s instructions for group-head cleaning. Do not assume a cleaning schedule or procedure is identical across machines.

When equipment may be limiting you
Consider equipment only if the recipe, preparation, bean choice, and cleaning checks do not resolve the problem. A grinder that cannot make small, repeatable espresso adjustments can make troubleshooting difficult; an unstable machine temperature can do the same. Neither condition means an upgrade is automatically necessary. A scale is the most directly useful tool for the process above because it helps measure dose and yield, but it does not fix flavor by itself.
