In a specific organic synthesis reported by a Serbian research team, lemon juice served as both the solvent and the catalyst, helping produce two families of heterocycles. The 2017 study reported selected gram-scale yields of up to 92% and found that the juice could be reused up to five times without loss of catalytic activity, according to the study’s news coverage. These results apply to the reactions tested—not to lemon juice as a universal replacement for laboratory chemicals.
What the researchers made
The team studied a one-pot reaction: starting materials called ethyl 2-hydroxy-4-alkyl(aryl)-4-oxo-2-butenoates, or their corresponding salts, were combined with either o-phenylenediamine or o-aminophenol in lemon juice. The reactions formed two families of ring-shaped molecules, known as heterocycles:

- 3,4-dihydro-2(1H)-quinoxalinones, made using o-phenylenediamine.
- 3,4-dihydro-1,4-benzoxazin-2-ones, made using o-aminophenol.
The compounds contain nitrogen or oxygen in their ring structures. The University of Kragujevac Digital Archive’s record of the 2017 paper describes the work as a one-pot biocatalytic synthesis, though the reported catalytic role is attributed to citric acid in the juice.

In this reaction set, lemon juice had two roles: it was the liquid medium in which the reaction took place and a source of citric acid that catalysed formation of a reactive species from the starting material. Chemistry World reported that the products were insoluble in water and precipitated at the end of the reaction.

Precipitation can make product separation more straightforward, but the available reports do not provide a complete experimental protocol or enough information to assess every step of the workup. They do not establish that arbitrary bottled or freshly squeezed lemon juice will behave identically to the juice used in the study.
Why the starting-material form mattered
The researchers compared the corresponding enolate salts with the ester/enol starting materials. Chemistry World reported that using the salts made the process 12 times faster than using the respective enols or esters. That is a reported comparison for this reaction, not a general speed advantage for salts in other chemical syntheses.

Reported yields, scale and reuse
The University of Kragujevac Digital Archive reports that selected products were synthesized on a gram scale in yields of up to 92%. Chemistry World also reported that the team prepared selected bioactive derivatives on a multi-gram scale. These demonstrations show that the work extended beyond tiny analytical batches, but they do not establish industrial scalability.

Chemistry World reported that the researchers reused the lemon juice up to five times without loss of catalytic activity. This is a finding about the tested reaction and reuse conditions; it does not establish indefinite reuse or performance with other juices.

What the green-chemistry claims do—and do not—show
The University of Kragujevac archive says the study reported less waste without by-products and favorable atom-efficiency, reaction-mass-efficiency, E-factor and EcoScale results. Those are metrics reported for the study’s route. The accessible record does not provide enough detail to independently compare complete life-cycle impacts, including sourcing, workup and alternative routes.
Chemistry World framed the method as an alternative to hazardous solvents such as toluene or xylene and to metal catalysts for these transformations. The scope matters: this is evidence about the reported reactions and conditions, not proof that lemon juice can replace those materials across chemistry or that the route is environmentally superior in every application.
