What Were Scotland’s Beehive-Shaped Stone Doocots Used For?

Scotland’s beehive-shaped stone doocots were practical pigeon houses—and visible markers of estate wealth. Learn how they worked and how their designs varied.

Scotland’s beehive-shaped stone domes were doocots: purpose-built homes for pigeons. The birds supplied estate households with eggs and meat, while their accumulated manure could help fertilise gardens. Their distinctive shape also made them conspicuous features of landed estates.

What was a doocot used for?

“Doocot” is the Scottish name for a dovecot, derived from doos, meaning pigeons or doves. As Historic Environment Scotland (HES) puts it, “Doocots are purpose-built homes for pigeons or doves, known in Scotland as doos.” The birds were a source of food for estate households: eggs and meat were useful, particularly in winter, and young pigeons were known as squabs.

The building’s other practical product was manure. Pigeon droppings could be collected and used as fertiliser. At Corstorphine, HES says the manure was likely used in gardens; it may also have been used to make saltpetre, an ingredient in gunpowder, but that possible use is not established for this particular site.

How did the stone buildings house pigeons?

Inside, doocots had rows of nesting boxes. Birds entered through flight holes, while ledges around the exterior could provide perches and make it harder for climbing predators to reach the openings. The design varied by site, but the basic purpose was the same: to provide a managed nesting place for birds close to the estate that used them.

Corstorphine Dovecot gives a sense of the possible scale. This 16th-century sandstone building in Edinburgh has 1,060 nesting boxes, according to HES. It stood about 150 metres from Corstorphine Castle, now vanished. HES suggests that distance balanced access and security with keeping the birds from disturbing the household. The number belongs to this building; it should not be treated as a typical capacity for all doocots.

Why did some look like domes?

Scotland’s earliest purpose-built doocots included circular, beehive-shaped structures. Their rounded profile is striking, but a domed silhouette is only one form of dovecot—not evidence that every such building had the same purpose or design. Scottish examples also include rectangular buildings with pitched or sloping roofs, lectern-shaped structures and later forms built as towers or incorporated into farm steadings.

These buildings were useful, but they also announced the presence and means of an estate. HES describes doocots as prominent landscape features, sometimes positioned near an estate or in view of the house, and notes that owners could add decorative details. The National Trust makes a similar point about English dovecotes: wealthy families kept birds for food and feathers, and the buildings could serve as visible status markers.

Three Scottish examples show how designs differed

Doocot Date and form What is documented
Corstorphine, Edinburgh 16th century; sandstone, beehive-shaped HES records 1,060 nesting boxes and says the birds likely supplied the castle household with food. Manure was likely used in gardens; saltpetre production is a possibility, not a confirmed site use.
Tealing, Angus Built in 1595; rectangular plan with a pitched roof The date is inscribed on the building. HES describes the projecting ledge as serving both predator deterrence and perching. Its shape is unusual, but it is not a true lectern type.
Westquarter, Falkirk Rectangular lectern type with a sloping roof; the building probably dates to the 1700s HES says it supplied pigeons for the laird’s table. A heraldic panel bears the date 1647, but HES cautions that the panel was reused and does not date the building.

How long were doocots built?

Doocots were built from the late medieval period into the 20th century, though construction declined significantly in the early 19th century. HES attributes the decline to changing farming and animal-husbandry practices, as well as complaints that pigeons damaged crops. In a February 2025 account, HES estimated that around 750 doocots in Scotland are listed or scheduled; that is an approximate heritage-site count, not a count of every dovecot that ever existed.

How to tell a dovecot from other stone structures

Icehouses

An icehouse stored ice, usually in a subterranean chamber, for summer food preservation and cooling drinks. A domed or mound-like appearance alone does not identify a building as a doocot; the nesting boxes and bird entrances are more relevant clues.

Bee boles

Bee boles are recesses designed to shelter skeps, or straw beehives. They are not pigeon nesting boxes. The Bee Boles Register notes that most recorded examples are on private property, so visitors should get the owner’s permission before going to a private site.

Dovecotes outside Scotland

Dovecotes were not all Scottish beehive structures. English examples also vary, including circular stone buildings and structures with pointed or domed roofs. The word describes a pigeon house, not one fixed architectural shape.
