Check how the wings are being held, ask when the batch was prepared, and confirm ingredients if allergies matter. Then compare price and the texture and sauce you want. Appearance can help you judge eating quality, but it cannot prove that food was handled safely.
Start with the case and the wings
Look for wings that appear moist rather than dried out, and avoid a tray that looks excessively soggy or seems to have been left unattended. These are practical quality cues, not a safety test: a normal appearance cannot establish how the food was handled.

- Hot-held wings: Check that the hot case is operating. If the timing matters to you, ask staff how recently the batch was prepared.
- Chilled wings: Make sure they are refrigerated. Ask when they were prepared or what a date code means if it is unclear.
CDC recommends retail deli foods be kept at 41°F or colder and reports that 1 in 6 delis in studies summarized on its page had a refrigerator that was too warm. That finding is a reason to ask sensible questions, not a measure of risk at the store in front of you. CDC: Food Safety Practices for Retail Delis

Useful questions include “When was this batch prepared?” and, for chilled wings, “What does this date mark mean?” A staff member’s answer can clarify freshness and handling information that is not obvious from the tray.

The FDA Food Code 2022 says refrigerated ready-to-eat time/temperature control for safety food prepared and held by a food establishment for more than 24 hours needs date marking. When held at 41°F or colder, the stated maximum is seven days, with the preparation day counted as Day 1. This is a food-establishment rule with exceptions and local adoption considerations; it is not a universal seven-day shelf life for every package of deli wings. FDA Food Code 2022
Check ingredients and allergy information
Sauce, breading, marinades, and seasoning can introduce allergens that are not obvious from the name of the wings. Ask about ingredients in each component, especially any allergen relevant to you, such as milk, egg, wheat, soy, sesame, or peanuts. If cross-contact is a concern, ask whether utensils or equipment are shared. If staff cannot verify the information you need, choose another item.

FDA identifies sesame as a major food allergen effective January 1, 2023. Its packaged-food allergen declaration requirements apply in specified circumstances, but foods wrapped or placed in a container after a customer orders at the point of purchase are outside those requirements. For meat and poultry products, FSIS says ingredients must be listed by common or usual name and supports voluntary allergen statements; do not assume a deli item will always have a separate “Contains” panel. Recipes can change, so confirm current ingredients with the deli. FDA: Food Allergies FSIS: Statement of Labeling Guidelines on Declaration of Allergens in Meat and Poultry Products

- Price: Compare cost per pound or per serving, and consider how many people you are feeding. Wings include bone weight, so a pound does not represent a pound of edible meat.
- Size and sauce: Compare the wings themselves and how much sauce or coating is on them. There is no universal standard for ideal wing size or sauce balance.
- Texture and timing: Choose according to how you plan to eat them. As a practical preference, a dry rub or lighter sauce may travel better, while heavily sauced wings may soften. Crispness is not an official safety measure.
These are shopper comparisons, not standardized tests or safety criteria. If you are choosing between vendors, weigh clear batch information and ingredient answers alongside the style and price you prefer.
