What Cheese Labels Mean: Milk Type, Aging, Rind, and Pasteurization Explained

Milk source, aging, rind style, and pasteurization are separate clues on a cheese label. Learn what each means and what it cannot guarantee.

Cheese labels describe several separate things: the animal that supplied the milk, whether the cheese is fresh or ripened, its rind style, and whether the milk was pasteurized. These clues help you compare products, but none alone guarantees a particular flavor, quality, or safety. For pasteurization, check the package or ask the seller: U.S. federal rules do not expressly require cheese labels to disclose whether the milk was raw or pasteurized, according to the FDA.

What does the milk type on a cheese label mean?

Milk type identifies the source of the milk used to make the cheese. Products may use cow, goat, or sheep milk, or a blend. It is an ingredient and style clue—not a complete prediction of the cheese’s taste or texture. The FDA overview of cheese styles covers these categories.

  • Cow’s milk: The label identifies cow milk as the source.
  • Goat’s milk: The label identifies goat milk.
  • Sheep’s milk: The label identifies sheep milk.
  • Mixed milk: More than one milk source is used.

Milk source is independent of whether the cheese is fresh or aged, what kind of rind it has, and whether the milk was pasteurized. Read each label detail separately rather than treating one as a substitute for the others.

What does fresh, aged, or ripened mean?

Fresh cheese has little or no significant aging; other cheeses are ripened. “Aged” does not by itself tell you exactly how long a cheese was matured or guarantee a particular flavor, texture, or safety outcome.

In the United States, a specific rule applies to cheese made from raw milk: it must be aged for at least 60 days at a temperature no lower than 35°F. That requirement is not proof that all disease-causing microbes have been eliminated. FDA inspection guidance notes that pathogens such as Listeria may persist, and the agency has cautioned that 60 days of aging may not adequately reduce disease-causing bacteria in raw-milk cheese. See the FDA dairy product manufacturers inspection guide and its 2016 update.

In a defined FDA sampling assignment, the agency tested 1,606 samples collected in 2014 and 2015. Its 2018 report found each of four tested pathogens—Salmonella, Listeria monocytogenes, E. coli O157:H7, and Shiga toxin-producing E. coli—in fewer than 1% of sampled aged raw-milk cheeses. Generic E. coli was found in 5.4% of samples; FDA says it can indicate insanitary processing conditions and rarely causes illness. These are historical findings for that sample, not a current estimate or an assurance about any particular cheese. Details are in the FDA sampling report.

What does a cheese rind label tell you?

Rind terms describe a cheese’s outer surface or the style used to develop it. The FDA overview names three categories:

  • Natural-rind: A natural rind style.
  • Washed-rind: A washed rind style.
  • Mold-ripened: A style ripened with mold.

Those category names alone do not establish how a particular rind tastes, feels, or whether it is intended to be eaten. The label is a style clue, not a universal serving instruction.

How can you tell whether cheese is made with pasteurized milk?

Look for wording such as “made with pasteurized milk” on the package, or ask the cheesemonger or seller. FDA consumer guidance recommends checking for pasteurized-milk identification. Because U.S. federal rules do not expressly require this disclosure for cheese, its absence from a label does not establish whether the milk was raw or pasteurized.

Pasteurization is heat treatment intended to reduce harmful microbes. It is an important safety distinction, but it does not make a product immune to contamination afterward. FDA notes that contamination can occur after treatment. Its consumer guidance on queso fresco-type cheeses explains the distinction.

What cheese labels do not tell you about safety

No single label dimension—milk source, aging, rind, or pasteurization—answers every safety question. In particular, raw-milk cheese aged for 60 days is not guaranteed pathogen-free. FDA’s findings on aged raw-milk cheeses are tied to a historical sampling program, while its inspection guidance cautions that some pathogens may persist.

For queso fresco-type cheeses, FDA describes them as fresh cheeses without significant aging and warns that Listeria can grow even at refrigeration temperatures. The agency advises pregnant women, adults over 65, and people with weakened immune systems to avoid these cheeses. For those higher-risk consumers who continue to eat them, FDA advises choosing sealed products with manufacturer details, a use date, and clear pasteurized-milk labeling; keeping them refrigerated at or below 40°F (4°C); and using them promptly. Consult the current FDA guidance for details.

FDA’s H5N1 dairy update describes research in which viable virus persisted in some non-heat-treated raw-milk cheese through and beyond 60 days, while heat treatment inactivated it under the studied conditions. In that update, the agency said it had not detected infectious H5N1 in pasteurized dairy products or aged raw-milk cheese intended for retail. These are specific research and surveillance statements, not a blanket assurance about every cheese or a substitute for current public-health guidance. See the FDA H5N1 and dairy update.
