The “protein popsicle” was a frozen research sample containing collected snow fleas—not a food product. In a 2005 report, researchers described an antifreeze protein from the winter-active snow flea Hypogastrura harveyi that bound to ice using glycine-rich sites, unlike the threonine-rich sites reported in the beetle and moth proteins then known.
What was the “protein popsicle”?
It was a practical way to prepare enough material for study: Queen’s University researcher Peter Davies and colleagues collected snow fleas and froze them in a sample from which they could obtain the antifreeze protein. The nickname referred to that laboratory sample, not to a popsicle sold to consumers. The account is described in Chemistry World’s 2005 report.

Snow fleas are active in winter. The species identified in the report was Hypogastrura harveyi, a springtail often called a snow flea despite not being a true flea.
How does the snow-flea protein affect ice?
Antifreeze proteins bind to ice as it forms and can limit the growth of ice crystals. They do not warm an insect or work like a conventional chemical antifreeze. The 2005 report said the snow-flea protein could prevent ice formation up to 5.8°C below freezing. That is a figure reported at the time, not a current product specification or an independently verified measurement here.

What made its ice-binding sites unusual?
The report described glycine-rich sites in the snow-flea protein. Glycine is associated with flexibility in protein structure, so researchers expected the protein to be less structured than the protein they reported finding. The account said the team planned to determine its structure to better understand how it binds ice.
The contrast was with beetle and moth antifreeze proteins then known, which were described as having threonine-rich ice-binding sites. This is a comparison among the proteins discussed in the 2005 report, not a claim that every insect antifreeze protein has one of these structures.

Davies summed up the range of solutions this way: “We’re seeing quite an amazing diversity of proteins all doing the same job.” The report also quoted University of Illinois antifreeze-protein expert Christina Cheng, who noted that repeated glycine residues could encourage turns in the protein chain and make its ice-binding behavior interesting to examine.

Why did researchers think the discovery mattered?
At the time, antifreeze proteins had been reported in fish, plants, insects, and bacteria. Davies suggested that these groups may have evolved such solutions independently. That was the researchers’ interpretation in the contemporary report, not a settled account of the evolutionary history of every antifreeze protein.

The finding showed that proteins with different sequences and structures could perform a related job: interacting with ice. The glycine-rich sites offered a new feature to investigate, rather than proof of a particular practical use.
Could antifreeze proteins be used in food, agriculture, or medicine?
The 2005 report raised frozen-food preservation, crop protection, and cooling organs before transplant without freezing them as possible applications. These were possibilities under discussion, not demonstrated outcomes or established uses of the snow-flea protein.

Patent disclosures provide separate examples of proposed food applications. One describes laboratory work involving a fusion protein in a popsicle mixture; another discusses using antifreeze proteins to inhibit recrystallization and limit movement of colours or flavours in layered water ices. The later patent specifies an AFP concentration of 0.0005% to 0.005% by weight for its disclosed ice-confection application. That is a patent specification, not general food-use advice or evidence of a marketed product. The disclosures do not establish that snow-flea protein is used in commercial popsicles. The “popsicle” in the story was a research sample. The cited report and patent disclosures establish proposed applications, but they do not establish that a consumer product containing snow-flea antifreeze protein is available. The discovery is notable for what it revealed about ice-binding proteins, not as evidence of an insect-derived food ingredient on store shelves.
