For the closest stand-in for cold, thin-sliced deli meat, choose packaged plant-based deli slices. For a homemade filling, try seasoned firm or extra-firm tofu; tempeh strips make a firmer, more textured sandwich. Seitan is another chewy option if you eat wheat. Hummus, beans and spreads work well as fillings, but they do not mimic deli slices. The right choice depends on texture, preparation time, nutrition labels and allergies.
How the main alternatives compare
| Alternative | Best for | Trade-offs and checks |
|---|---|---|
| Packaged plant-based deli slices | A ready-to-eat sandwich with cold, thin slices | Recipes and nutrition vary. Check sodium, saturated fat, protein, ingredients and allergens on the package. |
| Firm or extra-firm tofu | Homemade slices you can season to taste | Usually needs seasoning and preparation; contains soy, a major food allergen. |
| Tempeh strips | A firmer, more textured sandwich or wrap | Has a distinct soybean flavor and texture; contains soy. |
| Seitan | A chewy, meat-like filling | Made from wheat gluten; avoid it if you have celiac disease or gluten sensitivity. |
| Hummus, beans or lentil spread | A substantial filling with little or no cooking | More like a spread or salad than deli slices. Check for sesame or legume allergies. |
| Nut or seed butter | A simple filling that needs little preparation | Has a different flavor and may raise major-allergen concerns. |
Packaged plant-based deli slices: the closest format match
If what you miss is the familiar cold sandwich stacked with thin slices, packaged plant-based deli slices are the most direct alternative. They are designed to take the same role in the sandwich, though taste and texture depend on the product.

Do not assume that a plant-based label means a product is automatically lower in sodium or saturated fat, or higher in protein, than conventional deli meat. The U.S. Food and Drug Administration says plant-based alternatives’ nutrient profiles vary with their plant sources, processing and added ingredients. Compare the Nutrition Facts and ingredient list for the specific product you are considering.

Tofu and tempeh: homemade options with different textures
Firm or extra-firm tofu
Tofu is a flexible base for homemade sandwich slices because it takes on seasoning and marinade. Choose firm or extra-firm tofu for a sliceable filling, then season it to suit the sandwich. It takes more preparation than opening a package, and tofu contains soy. The U.S. Department of Veterans Affairs includes firm and extra-firm tofu among meat replacements in its May 2024 plant-based diet guide.
Tempeh strips
Tempeh has a firmer, more textured bite than tofu and a distinct soybean flavor. The VA guide notes that tempeh may be available pre-marinated and in strips for sandwiches and wraps. It is also made from soy, so it is not a suitable choice for someone avoiding soy.

Seitan: chewy, but made from wheat
Seitan is made from wheat gluten and can provide a chewy, meat-like filling. It is not suitable for people with celiac disease or gluten sensitivity, as the VA guide cautions. Check ingredient labels carefully if you need to avoid wheat or gluten.
Spreads and legumes: filling without imitating deli meat
Hummus, mashed beans or lentils can make a substantial sandwich, but their texture and flavor are different from sliced deli meat. They are a good choice when the goal is an easy filling rather than a close imitation. Consider allergies: hummus commonly contains sesame, and beans and lentils are legumes.

Nut and seed butters are another low-preparation option, especially in sandwiches where their flavor fits. They are not deli-like, and nuts and some seeds can be major allergens. USDA guidance for child nutrition programs lists beans, peas, lentils, tofu, tempeh, and nut or seed butters among meat alternates; that program guidance does not compare individual products nutritionally. See USDA’s meats and meat alternates guidance.
How to choose by your priority
- Closest cold-sandwich substitute: Start with packaged plant-based deli slices and compare product labels.
- More control over seasoning: Use firm or extra-firm tofu for homemade slices.
- A firmer, more substantial bite: Try tempeh strips, if soy works for you.
- A chewy wheat-based filling: Consider seitan only if you can eat gluten.
- Minimal preparation and no need to mimic meat: Choose hummus, beans or lentil spread; check allergy concerns.

USDA FSIS guidance on Listeria addresses prevention measures for retailers handling ready-to-eat foods prepared or sliced in delicatessens. It is context about deli handling, not proof that packaged plant-based products have no food-safety risks and not product-specific storage advice. Follow the storage instructions on the package.
