Choose a conventional oven if you mainly bake, roast, brown, broil, or cook large batches. Choose a steam oven if you will regularly use moist-heat cooking for foods such as vegetables, seafood, rice, or gentle reheating. If you want both kinds of cooking in one appliance, consider a combi-steam oven—but confirm it offers full steam cooking, traditional oven modes, and enough usable capacity. Some conventional ovens advertise “added steam” without being able to steam food.
What is the difference between a steam oven and a conventional oven?
A conventional oven cooks with dry heat; a convection oven adds a fan to circulate that heated air. A steam oven generates water vapor for moist-heat cooking. A combi-steam oven combines steam with conventional cooking modes, though the modes vary by model.

Product labels can be misleading. Bosch distinguishes full steam from “added steam”: its guide describes added-steam appliances as convection ovens that add moisture for a crust, but says that “Steaming, however, isn’t possible.” Check the exact model’s mode list rather than assuming that a listed steam function means full steam cooking. Bosch’s steam-oven buying guide
Steam-only, combi-steam, and added-steam models
- Steam-only: Designed for moist-heat cooking. It may not replace an oven you rely on for conventional baking or browning.
- Combi-steam: Offers steam and traditional oven modes, but the specific options differ. Miele describes its category as a full steam oven with traditional operating modes. Wolf’s current CSO mode list includes steam, convection, convection humid, convection steam, broil, bread and pastry, sous vide, and reheat. Consult the selected model’s manual and specifications. Miele’s steam-oven overview; Wolf’s CSO product information
- Conventional oven with added steam: Uses moisture for selected cooking tasks, but may not have a full steam mode. Bosch says its added-steam models cannot steam food.
Which oven fits the way you cook?
Choose a conventional oven for dry-heat staples
A conventional oven is the straightforward fit if most of your cooking involves baking, roasting, browning, broiling, or cooking several large dishes at once—and you do not expect to use steam regularly. Dry heat remains important for recipes where browning or a crisp exterior is central.

Consider steam for moist-heat cooking and reheating
Steam may suit you if you often cook vegetables, seafood, or rice, or want a supported sous-vide mode. Those are examples identified for Wolf’s steam mode, not guarantees about every steam oven. Thermador says its reheat mode uses steam to help food avoid drying; verify whether a model you are considering offers that mode. Wolf’s CSO product information; Thermador’s steam-oven information
Consider combi-steam if you want both kinds of cooking
A combi-steam oven is designed to pair moist cooking with conventional baking or roasting. Some combination modes can help retain moisture inside food while browning the exterior: Thermador describes intermittent steam assist for selected convection modes, and Wolf describes its convection-steam mode as maintaining a moist interior while browning and crisping. Results depend on the available mode and recipe; steam alone does not guarantee crisping.

- 14-IN-1 VERSATILITY: One multicooker, air fryer toaster oven, and countertop oven in a single appliance — Combi Meals, Combi Crisp, Combi Bake, Rice/Pasta, Sear/Sauté, Steam, Bake, Toast, Pizza, Slow Cook, Proof, Sous Vide, Air Fry, Broil.
- COOKS FROZEN FOOD WITH NO DEFROSTING: Go from freezer to table in under 30 minutes. Super-heated steam thaws and cooks frozen chicken through to a safe internal temperature, then rapid cyclonic air crisps the outside like a large air fryer — no thawing, no dry spots.
- HOW LONG STEAM TAKES: Cooks with steam that’s 50% faster than conventional ovens; a complete family meal —protein, veggies, and rice or pasta together — is ready in 15 minutes, 50% faster than a wall oven.
- XL CAPACITY, SMALL-OVEN FOOTPRINT: Feeds up to 8 and fits a 6-lb roast chicken, a 5-lb top round roast, a 10-inch pizza, 24 oz of pasta, 4 cups of dry rice, or 2 lbs of fries — in a compact countertop footprint.
- NINJA COMBI COOKER TECHNOLOGY: HyperSteam and Air Fry work together for juicy insides and deliciously crispy outsides at once — the air fryer steamer combo a standard toaster oven or air fryer can't match.
If you are replacing your only oven, compare its full mode list with the jobs you need it to do. A steam-only appliance is a specialist; a combi-steam model can be a single-oven option only if its modes and capacity meet your needs.

- Confirm the cooking modes. Establish whether the model is steam-only, combi-steam, or conventional with added steam. Check for full steam capability and the dry-heat modes you use.
- Measure the usable cavity and installation opening. Compare interior dimensions and rack layout with your cookware and largest regular meals. Check cabinet cutout dimensions separately from external appliance dimensions. Bosch lists example formats of 60 × 60 cm and 60 × 45 cm for its range; these are not universal sizes or measures of usable capacity. Bosch’s steam-oven buying guide
- Find out how the oven gets water. Some residential models use refillable tanks rather than a mains water connection. Bosch describes that setup for its range, but requirements vary by model and market; check the exact specifications. Bosch’s steam-oven buying guide; Bosch’s steam-oven information
- Read the care instructions. Follow the model’s directions for water quality, draining, and descaling. Bosch describes an automatic descaling program in its range, but that feature should not be assumed on other models. Bosch’s steam-oven buying guide
- Allow for recipe learning. Settings and results are model-specific. Thermador offers a rule of thumb that steam-convection recipes may take about one-quarter less time; treat that as guidance, not a universal conversion. Follow the appliance manual and check food for doneness. Thermador’s steam-oven information
Do steam ovens save time or retain more nutrients?
Some published performance figures are manufacturer- and mode-specific. Bosch Home UK reports “up to 54% more nutrients” and “up to 10% more Vitamin C” for broccoli compared with conventional cooking methods, citing University of Hohenheim test results dated 5/2022 and 10/2022. It also reports that green beans and carrots were “up to 50% quicker” and potatoes “up to 35% faster” with Steam Function Plus than with cooking using steam at up to 100°C, citing BSH laboratory tests in 2022. These figures describe the cited comparisons, not every steam oven, food, recipe, or conventional cooking method. Bosch Home UK’s steam-oven information

The U.S. Environmental Protection Agency says, “Steam and combi-modes require generation of steam, an energy- and water-intensive process.” Its May 2023 WaterSense at Work: Combination Ovens guidance concerns commercial combination ovens, not residential appliances. Its figures and savings context should not be used to estimate household operating costs.
