Master data management (MDM) gives restaurant teams a consistent foundation for connecting sales, store, product and franchise information. In an October 2026 interview, Kartik Pillai described how that foundation supported operational decisions at Yum! Brands before he moved to Pizza Hut: helping franchisees understand what sold, where it sold and to whom, with the aim of improving staffing and demand forecasts.
Why consistent data matters in quick-service restaurants
Quick-service restaurants need to make decisions across many locations, products and franchise operators. Pillai framed data as an operational tool for that distributed business: diginomica reported that franchise businesses operated 98% of Yum! Brands outlets, attributing the figure to Pillai’s account. In that setting, information from ordering, supply-chain, menu and ERP systems can help franchisees make day-to-day decisions.

“There is a lot of data that is funneled via the franchise operations such as ordering systems, the supply chain, menu systems and even the ERP; we take that data and empower the franchisees,” Pillai told diginomica. The interview describes his Yum! Brands work before his move to Pizza Hut; it is not a report on Pizza Hut’s current data program.

MDM is the practice of creating and governing consistent records for important business entities, such as products, locations or customers, so that different systems can work from aligned information. Pillai’s emphasis was on keeping those foundations useful across different operational questions: “MDM gives us data foundations that hold true no matter what the use case is, be it at the store level or product.”

In the use case he described, joined-up sales information makes it possible to examine three practical dimensions:
- What sold: the product or menu item recorded in the transaction.
- Where it sold: the store or other relevant location.
- To whom it sold: the customer context available to the business.
The article says Pillai’s team used this kind of visibility to support franchisee workforce planning and demand forecasting. It also reports that more than 60% of Yum! Brands orders came through digital channels, a figure Pillai cited in the interview before moving to Pizza Hut. That is a Yum! Brands figure as reported by diginomica, not an independently verified measure or a figure for Pizza Hut.

From information to operational decisions
Consistent records are useful when they help people act. A franchisee planning a shift, for example, needs to relate demand to a specific store and time; a forecast is only as helpful as the underlying product, location and sales information. The interview presents MDM as a foundation for making that information more coherent, with staffing and demand planning as intended applications—not as controlled proof that MDM by itself improves either outcome.
Price decisions also depend on context. Pillai described quick-service dining as a low-margin business in which customers are price-sensitive and franchise operators need to remain viable. He said timely price changes require taking account of the wider ecosystem, including how decisions reach the customer and affect franchise businesses. The article reports that Placer.ai measured a 1.3% year-on-year decline in the quick-service restaurant sector in the first half of 2026; that sector figure is reported by diginomica and was not independently verified here.

Governance and AI need context, not just more data
Governance helps establish which records are authoritative and how they are maintained and used. Pillai’s argument is that reliable, consistent context can help AI systems produce more useful insights. That is a rationale for treating data foundations as part of AI readiness, not evidence that MDM alone guarantees accurate AI output.
The interview also describes a pragmatic approach to data boundaries: Pillai said Yum! Brands did not cross-pollinate data between business lines or geographies and had little use for personally identifiable information. That is his account of Yum! Brands, not a general rule for restaurant groups. Teams still need to decide what data a given use case requires and govern access appropriately.
Pillai also discussed the costs and infrastructure demands of large language models, alongside the use of observability to monitor consumption. The interview provides no measured savings or named observability product. In his account, Informatica was the technology partner for MDM work at Yum! Brands; he also mentioned Informatica copilot technologies, Cursor and headless features as examples, not as a comparative assessment of products.
Disclosure: diginomica stated that Salesforce, which owns Informatica, was a premier partner of the publisher at the time of publication.

What the interview establishes—and what it does not
The interview offers a practitioner’s account of using MDM and governed data to support restaurant operations. It provides examples of the information involved and the decisions it was meant to inform, but it does not compare MDM platforms, describe a full architecture or establish measured improvements in forecasts, labor planning or AI accuracy. Its reported figures should be read with their attribution and timeframe: Yum! Brands operational figures come from Pillai as reported by diginomica, while the first-half 2026 sector decline is attributed to Placer.ai through the same article.
