Propane vs. Butane for Pizza Ovens: Which Fuel Works Best?

Propane generally handles cold weather better because it vaporizes at much lower temperatures, while butane can work well in mild conditions. Your oven manual, regulator pressure and approved cylinder connection determine the safe choice.

Propane is usually the more dependable choice in cold weather, but only when your pizza oven is rated for propane and supplied with the correct regulator, hose and cylinder connection. Butane can work perfectly well in a compatible oven during mild weather. Neither fuel is proven by the available manuals to make every oven hotter, cook better pizza or cost less to run. The appliance rating plate and model-specific manual must decide compatibility first.

The practical answer

Choose propane if your oven permits both fuels and you expect to cook in cool or winter conditions. The WilTec Wildanger Technik manual explains that butane’s boiling point is approximately 0 °C, while propane’s is approximately −42 °C, and recommends propane for winter use. Below its boiling point, butane cannot vaporize reliably enough to supply the burner. Propane remains able to vaporize at substantially lower ambient temperatures.

That advantage concerns fuel vaporization and cold-weather reliability. It does not prove that propane produces a higher peak oven temperature, better pizza, faster cooking or lower fuel cost in every appliance. In warm conditions, a properly connected butane setup may perform normally. If the manual lists only one gas, using the other is not a safe experiment.

Compatibility comes before fuel preference

Pizza ovens use low-pressure gas systems whose fuel category, pressure, connector and cylinder arrangement vary by model and market. “LPG” on a listing is not enough to establish that any propane or butane bottle is suitable. Read the rating plate attached to the oven and the manual supplied for your exact model and destination country.

Check What to confirm Why it matters
Permitted gas Propane, butane, a named LPG mixture, or a restricted combination The burner and controls are certified for particular gas properties and operating conditions.
Regulator pressure The pressure in mbar or another unit specified for that model and market A regulator with the wrong pressure can cause unsafe combustion or prevent the burner from operating correctly.
Hose and connector Thread, clip-on or other connector type; hose specification and length Physical fit does not prove that the connection is approved or leak-tight.
Cylinder type Permitted cylinder size, valve and local gas standard Gas bottles and valves differ between countries and suppliers.
Installation location Outdoor-use requirements, ventilation and clearance distances Gas appliances can accumulate dangerous combustion products or leaked gas in enclosed areas.

Do not substitute a regulator, add an adapter, convert pressure or swap fuels merely because the cylinder appears to fit. Ask the oven manufacturer or a qualified gas professional when the manual is unclear.

What the model-specific examples show

The WilTec item 63448 manual specifies a 50 mbar regulator and states that the hose and regulator are not supplied. That 50 mbar requirement belongs to item 63448; it is not a universal pizza-oven setting.

The Solo Stove Pi 12 instructions require an appropriate low-pressure regulator and flexible hose, and direct the owner to use a suitable cylinder while following cylinder instructions and local requirements. They do not authorize every regulator or every LPG bottle.

A Cozze manual result likewise illustrates why the specified pressure and cylinder range must be checked against the current manual for the particular model. A retailer description or an older third-party copy should not override the documentation supplied with your oven.

Why propane is stronger in cold weather

Gas in a cylinder is stored as liquid and feeds the burner after vaporizing. Vaporization slows as the surrounding temperature falls. According to the 2023 WilTec Wildanger Technik manual, butane’s boiling point is about 0 °C and propane’s is about −42 °C. The manual says butane cannot be used below its boiling point and recommends propane for winter operation.

In practice, a butane oven may light normally on a mild afternoon, then show weak flames or fail to stay lit as the bottle and air cool. Propane is less vulnerable to that particular low-temperature limitation. Wind, a nearly empty cylinder, high burner demand and a cold bottle can still affect either fuel, so propane is not a guarantee of perfect performance.

Conditions where the distinction matters most

  • Cooking near or below 0 °C, where butane’s stated boiling point becomes a direct concern.
  • Long preheats or repeated pizzas that draw gas continuously and cool the cylinder.
  • Outdoor locations exposed to cold ground, shade or wind.
  • Events where a weak flame would be difficult to diagnose or replace quickly.

Conditions where butane may be adequate

  • Outdoor cooking in temperatures comfortably above freezing.
  • An oven whose manual explicitly approves butane and supplies a matched regulator.
  • A local cylinder system that makes the approved butane format easier to obtain than propane.

These are operating judgments, not a claim that propane always reaches a higher cooking temperature. Burner output depends on the appliance design, jet, regulator pressure, airflow and control settings.

Regulator pressure and connectors are not interchangeable

The regulator reduces cylinder pressure to the low pressure the burner is designed to receive. Its outlet pressure must match the oven specification. A regulator intended for one gas category or market may be unsuitable for another even if its hose end appears identical.

Standard Propane Fuel Cylinder (1 Pack) (Тwо Расk)
  • Universal Compatilbility: Standard CGA 600 RH connection fits most portable torches, camping stoves, and heaters. Perfect for quick swaps in the field, on the job site, or at home.
  • Portable & Lightweight: The slim 14 oz design is ideal for tight crawlspaces or packing for camping. Delivers pro-grade heat performance without the heavy bulk of larger propane tanks.
  • Rugged Durability: Impact-resistant steel construction ensures secure, leak-free operation. Built to survive the job site and the outdoors so your fuel is ready whenever you are.
  • Clean-Burning Performance: Optimized for high-heat tasks like soldering, brazing, and cooking. The preferred choice for contractors, DIYers, and outdoor enthusiasts needing reliable fuel.

For example, the WilTec item 63448 documentation calls for 50 mbar. The Solo Pi 12 documentation describes an appropriate low-pressure regulator and flexible hose but does not turn the WilTec figure into a general rule. Treat every number as model-specific.

Before buying a replacement hose-and-regulator assembly

  1. Record the exact oven model and the country in which it will be used.
  2. Read the rating plate and manual for permitted gas, outlet pressure, connector style and cylinder limitations.
  3. Match the regulator’s stated inlet gas and outlet pressure to those requirements.
  4. Confirm that the hose is approved for LPG, has the correct ends and is within any stated age or replacement limits.
  5. Check local rules for cylinder storage, transport and connection.
  6. Have a qualified gas technician resolve any mismatch instead of using an adapter or improvised fitting.

Does propane cook pizza better?

The available product instructions do not establish a universal difference in peak temperature, preheat time, pizza quality, fuel cost or runtime between propane and butane. Fuel selection alone cannot support those claims.

Compare burner input only for a named model and its specified setup. The 2024 Solo Stove Pi 12 instruction manual lists a nominal heat input of 4.4 kW, with stated consumption of 320 g/h for butane and 314 g/h for propane. Those are the manual’s technical parameters for that model and configuration. They are not a controlled comparison showing that propane cooks hotter, that butane cooks more slowly or that one fuel is cheaper per pizza.

Solo Stove Pi 12 parameter Manual value How to interpret it
Nominal heat input 4.4 kW Applies to the stated Pi 12 configuration, not every gas oven.
Butane consumption 320 g/h A stated technical rate under the manual’s specified conditions.
Propane consumption 314 g/h A stated technical rate under the manual’s specified conditions; it is not proof of better pizza or lower total cost.

Actual consumption changes with burner setting, preheat duration, ambient temperature, wind, cylinder temperature and the number of pizzas. Without comparable test conditions, do not convert those figures into a universal cost-per-cook claim.

Choosing by climate and practical use

Cold climates and winter cooking

If the oven is approved for both gases, propane is the sensible default because its stated boiling point is much lower. Keep the cylinder upright, protected from impact and positioned as the manual directs. Do not place it in an improvised enclosure to warm it.

Mild climates and occasional use

Butane may be convenient when temperatures remain above freezing and approved canisters are readily available. The convenience is worthwhile only if the gas type, pressure and connector match the oven exactly.

Frequent cooking or events

Prioritize dependable supply, a spare approved cylinder and a setup that can be inspected quickly. Propane’s cold-weather margin can reduce one failure mode, but it does not eliminate leaks, regulator faults or an empty bottle. Follow the oven’s stated cylinder-size limits and local handling rules.

Travel across regions

Do not assume a cylinder or regulator bought in one country will be legal or compatible in another. Valve designs, pressure standards and gas blends vary. Obtain the destination-market manual and use locally approved equipment rather than carrying an unverified adapter.

Safe setup procedure

Perform the following checks every time the gas arrangement is changed. The oven must be outdoors, on a stable surface, with clearances specified by its manual.

  1. Inspect the appliance. Read the rating plate and verify the permitted gas and pressure. Check the burner, control knob, hose and inlet for damage, dirt or corrosion.
  2. Inspect the cylinder. Confirm that it is the approved type, upright and within its inspection or exchange requirements. Never use a cylinder with a damaged valve.
  3. Fit the matched regulator. Attach the regulator and hose exactly as the manual illustrates. Do not force threads or use unapproved sealants, adapters or pressure converters.
  4. Connect the hose. Keep it away from hot surfaces, sharp edges, traffic paths and points where it can be kinked or crushed.
  5. Check for leaks. With the burner controls off, open the cylinder valve as instructed and use the leak-check method specified by the manual or local authority. Never search for a leak with a flame. If you smell gas, close the valve, extinguish ignition sources, move away and follow emergency guidance.
  6. Light as directed. Use the manual’s ignition sequence, keeping your face and hands away from the burner opening. If ignition fails, turn the control off and wait the specified time before trying again.
  7. Monitor operation. The flame should behave as described in the manual. Shut down if it is unstable, unusually yellow, lifting off the burner, producing soot or repeatedly extinguishing.
  8. Shut down correctly. Turn off the burner controls and then close the cylinder valve according to the manual. Allow the appliance to cool before covering or moving it.

Outdoor use, cylinder handling and storage

The Solo Pi 12 instructions require outdoor use, a suitable low-pressure regulator and flexible hose, and compliance with cylinder instructions and local requirements. Treat those conditions as baseline safety requirements, not optional suggestions.

  • Never operate a gas pizza oven in a home, garage, tent, vehicle, shed or other enclosed space unless the manufacturer explicitly certifies that location.
  • Keep combustion-air openings and the area around the burner unobstructed.
  • Store cylinders upright in a cool, well-ventilated place away from flames, heat sources and ignition equipment.
  • Do not leave a connected cylinder in a hot vehicle or expose it to direct heat.
  • Keep children and combustible materials away from the hose, cylinder and hot oven.
  • Use the cylinder’s valve cap and storage procedure where supplied.
  • Follow local rules for transport, exchange, inspection and disposal.

A cold-weather problem is not a reason to heat a cylinder with a flame, immersion heater or improvised device. Replace an empty or suspect cylinder through an approved supplier.

Troubleshooting weak or unreliable flames

Symptom Possible explanation Safe response
Oven will not light Closed cylinder valve, empty cylinder, incorrect regulator, blocked burner or an ignition fault Turn controls off, verify the manual’s connection sequence and cylinder status, then stop if the fault remains. Do not bypass safety controls.
Flame weakens in freezing weather Butane vaporization is limited near its approximately 0 °C boiling point; a cold cylinder or high demand can also contribute If the oven permits propane, use the approved propane setup for cold conditions. Do not warm the cylinder artificially.
Flame is yellow, noisy or lifts off Incorrect pressure, poor ventilation, contamination or burner damage Shut down, close the cylinder and have the appliance inspected. Do not change jet size or regulator pressure yourself.
Gas smell or hissing Leak at a valve, hose, regulator or connector Close the cylinder if safe, extinguish ignition sources, leave the area and follow local emergency or supplier guidance. Never operate until repaired and leak-tested.
Oven repeatedly shuts off Wind, low gas supply, an overheat or flame-failure safety device Move or shield the appliance only as the manual allows, check the cylinder and restart using the prescribed procedure. Persistent shutdown requires service.

Availability and running-cost questions

Propane versus butane cost cannot be answered accurately without a location, cylinder size, refill or exchange price, tax, delivery charge and actual consumption. The manuals do not establish a universal cost per pizza or runtime advantage. Compare the price of the approved cylinder in your market and, if the manufacturer provides a consumption rate for your exact oven, calculate it using the fuel mass actually supplied.

Availability can be more important than a small theoretical difference in consumption. A fuel that is easy to replace locally, supplied in the correct valve format and supported by an approved regulator may be the practical choice. Do not buy a cheaper bottle if its connector or pressure does not match the oven.

Quick Recap

A decision checklist

  1. Is the gas listed? If not, do not use it.
  2. Does the pressure match? Match the exact regulator pressure, such as the 50 mbar specified for WilTec item 63448, only when that is your model.
  3. Will temperatures approach freezing? Prefer approved propane where the manual permits both; the WilTec figures give propane a much lower boiling point.
  4. Are the hose and connector approved? Confirm the full assembly, not just the cylinder valve.
  5. Can you obtain replacements locally? Check approved cylinder sizes, exchange arrangements and local rules.
  6. Are you comparing performance fairly? Use only named-model input specifications; do not infer pizza quality or peak temperature from fuel type alone.

Bottom-line guidance for common situations

Your situation Most defensible choice Condition
Winter or near-freezing outdoor cooking Propane The oven manual must approve propane and specify the matching regulator, hose and cylinder.
Mild weather, oven approved for butane Butane can be suitable Use the approved pressure and connector; monitor for cold-related weakening.
Manual lists only one gas That listed gas Do not substitute the other fuel.
Unclear pressure or connector Neither until confirmed Obtain the current manual or advice from the manufacturer or a qualified gas professional.
