Nonstick is usually the more convenient choice when easy release and cleanup matter most; stainless steel suits bakers who prefer an uncoated surface or need a higher oven limit from a specific product. The right pick depends on the pan’s construction, finish, shape, recipe, and maker’s care instructions—not its material label alone.

The temperature figures apply only to the named product lines, not to all nonstick or stainless pans. Check the exact pan’s instructions before using it, especially at high heat or under a broiler. KitchenAid likewise advises following the manufacturer’s recommendations and using the bakeware size specified by the recipe (KitchenAid’s bakeware guidance).

Choose nonstick when easy release is the priority
Nonstick can reduce the effort involved in releasing delicate bakes, such as cakes, and can simplify cleanup. It is a practical choice if your recipes stay within the specific pan’s temperature limit and you are comfortable following its handling and washing restrictions. It does not necessarily remove the need to grease a pan: follow the recipe and manufacturer’s directions.
Care varies by product
All-Clad recommends hand washing its Pro-Release bakeware, avoiding cooking spray, and using nonstick-safe, silicone, or wooden utensils. Nordic Ware’s instructions for its Naturals nonstick bakeware also call for hand washing and advise against metal utensils, scouring pads, and abrasive cleaners. Read the directions for the exact model rather than assuming every coated pan has the same rules (All-Clad care and use; Nordic Ware Naturals nonstick use and care).

Consider stainless steel for an uncoated surface or a product-specific higher heat limit
Stainless steel is worth considering if you want an uncoated baking surface. Some stainless products also have higher stated heat limits than some nonstick lines: for example, All-Clad gives its stainless bakeware a higher limit than its own Pro-Release range. These are product-specific instructions, not a general rule that every stainless pan tolerates more heat than every coated one.
Expectations for browning matter. KitchenAid’s general guidance says stainless steel can produce light, golden crusts and uneven browning, and that baking time may need to increase. If consistent browning is important, consider the pan’s finish and construction, as well as the recipe and your oven, instead of relying on the word “stainless.” Wolf/Sub-Zero notes that stainless steel is a poor heat conductor and describes different heating rates between a pan’s bottom and sides (Wolf/Sub-Zero’s bakeware selection guidance).

Stainless still needs appropriate cleaning
Stainless care instructions can allow more scrubbing than coated bakeware, but they are not a license to use any abrasive. All-Clad says its stainless bakeware can be cleaned with a gentle nylon scouring pad for difficult residue and warns against harsh abrasives. Follow the care directions for your pan (All-Clad care and use).

- For a delicate bake that must release cleanly: A nonstick pan may make release easier; grease it as directed, and observe its specific heat and care limits.
- For an uncoated surface: Stainless steel is a reasonable option, but account for the recipe’s browning goals and the pan’s own construction.
- For high-heat baking or broiling: Check the exact maker-stated limit. Do not infer it from the material name.
- For even browning: Look at the pan’s design, finish, and construction, and follow recipe and appliance guidance. Neither material label alone promises an even result.
- When replacing a pan: Compare like-for-like shapes and sizes. A sheet pan, loaf pan, and cake pan serve different jobs, and KitchenAid advises using the size the recipe recommends.
