Mushroom-derived peptides can make controlled food models taste saltier, potentially allowing formulators to lower sodium while preserving flavor. The strongest result so far—more than 70% saltiness-enhancing capacity—came from a 2026 study of thermally processed Coprinus comatus hydrolysates. It is a study-specific maximum, not a promise that every mushroom ingredient or finished meal will taste 70% saltier.
What the studies actually found
Researchers have tested peptides released when mushroom proteins are broken down by enzymes or heat. They then measured perceived saltiness in model solutions, broths or hydrolysates using trained sensory panels, electronic-tongue instruments and chemical analysis. Results differ substantially with the mushroom species, peptide sequence, dose, salt concentration, processing history and sensory method.

| Study and source | Preparation and test conditions | Reported result |
|---|---|---|
| 2024, Agaricus bisporus | Peptide YDPNDPEK at 0.4% in 35 mmol/L sodium chloride | 30% saltiness enhancement |
| 2025, Coprinus comatus | Strongest peptide fraction in sensory testing | 22% increase |
| 2025, synthetic GDNVGF | 0.01% in 70 mmol/L sodium chloride | 17% enhancement |
| 2025, synthetic GDNVGF | 0.7% in water | Saltiness equivalent to 36.89 mmol/L sodium chloride |
| 2026, thermally processed Coprinus comatus hydrolysate | Time-controlled thermal processing | More than 70% saltiness-enhancing capacity |
| 2021, hydrolyzed Agaricus bisporus | Natural mixture of several pyroglutamyl peptides in mushroom broth | Significant salty and kokumi enhancement despite each peptide being below its individual taste threshold |
The figures are therefore not interchangeable. A 30% effect from one purified peptide in a defined salt solution cannot be added to a 22% effect from a different mushroom fraction, and neither predicts the sodium content or taste of a commercial soup.

Why a tiny amount of peptide can change salt perception
The work combines sensory measurements with mass-spectrometry-style chemical identification and computer modeling. In the Agaricus study, researchers modeled interactions with the T1R1/T1R3 umami receptor complex. The Coprinus study identified residues including Asn588, Ser165, Asp5 and Arg168 as possible contact points for GDNVGF.

These docking results provide a plausible molecular explanation, but they do not prove that any one predicted contact causes the human sensation. Human taste is also influenced by concentration, competing ingredients, texture and aroma. The 2021 Agaricus result is especially important because it showed synergy: several compounds that were individually below their taste thresholds produced a measurable salty and kokumi effect together.
What “more than 70% saltier” means
The headline number describes the change in perceived saltiness or saltiness-enhancing capacity under the 2026 study’s specific conditions. It does not mean a finished product can contain 70% less sodium, nor that a person will perceive every mushroom peptide as 70% saltier. The result came from a processed Coprinus comatus hydrolysate, not from an ordinary spoonful of mushroom powder.

Other controlled experiments reported 17%, 22% and 30% improvements. Those differences are expected when researchers change peptide identity, dose, salt level, heating schedule or the way panelists score taste.

Heat and aroma can strengthen or weaken the effect
Processing is not a minor detail. The 2025 Coprinus work found that the peptides were generally thermally stable, but saltiness enhancement fell after some thermal degradation and changed again during Maillard reactions. A later 2026 analysis connected sulfur-containing thiols and thiophenes in processed hydrolysates with odor-induced saltiness enhancement. In other words, a cooked product may seem saltier because aroma reinforces taste, even when the peptide’s direct effect is unchanged.

Developers must therefore test the complete recipe after baking, boiling, frying or sterilization. A peptide that performs well in a room-temperature model solution may behave differently in a high-fat sauce, an acidic broth or a product exposed to prolonged heat.
Can mushroom peptides replace table salt?
Not on the evidence available. The studies establish changes in perceived saltiness in controlled solutions, broths and hydrolysates; they do not establish a universal sodium-replacement percentage, long-term blood-pressure benefit or regulatory approval for purified mushroom peptides as sodium-reduction ingredients.

A realistic formulation goal is to use a peptide or hydrolysate as one part of a sodium-reduction strategy, then verify that the finished food meets its sodium target. Salt may still be needed for preservation, texture, processing performance and flavor balance.

How commercial mushroom seasonings compare
Packaged mushroom seasonings are available now, but they are not equivalent to purified research peptides. Many are flavor blends that include substantial salt.

| Ingredient or study | What is reported | What it means for sodium reduction |
|---|---|---|
| Lee Kum Kee Premium Mushroom Seasoning Powder | 200 g product for soups, noodles, casseroles and stir-fries; ingredients include salt, maltodextrin, sugar, yeast extract, shiitake powder and white button mushroom powder; manufacturer lists 38.2 g salt per 100 g | This is an umami mushroom seasoning powder, not a sodium-free peptide product. |
| Unilever Food Solutions Knorr Mushroom & Vegetable Seasoning | Marketed for stir-fries, soups and marinades; manufacturer says it contains less sodium than a competitor. The ingredient list begins with iodized salt and lists mushroom powder at 0.02%. | A lower-sodium claim relative to a competitor does not make the seasoning low-sodium in absolute terms. |
| 2023 clear-soup study | Split-gill mushroom powder at 0.2–0.8% produced an electronic-tongue profile similar to 0.4–0.6% MSG | Supports mushroom powder as a flavor-building tool, but does not prove equivalent sodium reduction in every recipe. |
A practical testing workflow for food developers
- Set a sodium baseline. Measure the recipe’s sodium per serving before adding any mushroom ingredient.
- Choose the material. Record the mushroom species, whether the ingredient is a whole powder, hydrolysate or purified peptide, and its peptide concentration.
- Run a controlled dose series. Test several concentrations against a fixed sodium level rather than assuming the strongest laboratory percentage will transfer directly.
- Evaluate the finished process. Repeat sensory testing after the product’s actual heating, storage and packaging steps.
- Check aroma separately. Note whether roasted, sulfurous or Maillard-derived aromas are contributing to the saltier impression.
- Verify the label and nutrition panel. Commercial seasoning blends can add more sodium than expected, even when their mushroom flavor is strong.
What remains unknown
- Whether the reported enhancements persist across large consumer populations and ordinary mixed diets.
- How purified peptides perform in long-term storage and in products with fat, acid, sugar or strong spices.
- Whether repeated consumption changes taste adaptation or produces measurable clinical sodium or blood-pressure benefits.
- Which peptide mixtures, doses and processing conditions are suitable for broad commercial use.
For now, mushroom peptides are best understood as promising taste-modulation tools. The evidence supports further low-sodium formulation work, while the “up to 70%” figure should remain tied to the particular processed Coprinus comatus experiment that produced it.
