It is a time- and order-specific observation made up of menu prices, fulfillment choice, fees, tax, discounts, and tip—and the displayed total may still be an estimate. To compare prices or build a reliable dataset, record those components separately alongside the platform, restaurant location, basket, jurisdiction, and observation time.
Why delivery can cost more than pickup
There are two distinct layers to compare: the price of the food and the costs added to fulfill the order. A delivery menu may price items differently from a pickup or in-store menu, before any delivery or service fee is added. DoorDash says it does not require restaurants to match in-store prices on delivery orders, although it encourages prices close to in-store levels. That statement describes DoorDash’s policy; it does not establish how every restaurant or platform prices.

After the food subtotal, the checkout may show delivery and service fees as separate charges, as well as a small-order or other fee, tax, discounts, and tip. These are not interchangeable categories. For example, DoorDash’s July 23, 2026 announcement described its delivery fee as fixed but varying by merchant, while its service fee varies with factors such as distance and order size. A long-distance fee continues to apply to a small number of deliveries, typically those over 10 miles. The company said fees and taxes would be shown again at checkout. What a food-delivery price record should contain
For analysis, store one record per platform, merchant and location, basket, fulfillment mode, and observation time. This is a practical data model derived from the distinctions platforms document, not a platform-mandated schema.

Use distinct values for zero and unknown. If a charge is not shown or cannot be captured, record it as unknown or not observed rather than as zero. Preserve a receipt or screen context when permitted. Do not infer where money goes from a fee’s label alone.

In DoorDash’s menu documentation, price is used for Marketplace delivery, while base_price is a second price field used for Marketplace pickup and DoorDash first-party channels. The same documentation describes different tax handling depending on jurisdiction: merchants may supply item-level tax rates in non-Marketplace Facilitator states, while DoorDash calculates tax in Marketplace Facilitator jurisdictions. If a menu does not supply tax rates, DoorDash says it relies on a third-party tax engine. Sugary-drink tax may be included where applicable; bottle fees are not collected unless the merchant specifies them in the menu. Uber Eats distinguishes an estimated subtotal from an estimated total and from the final total. On some orders, estimated subtotal and tax can differ from the final amounts because of in-store pricing, item availability, or substitutions. The platform’s help page defines estimated subtotal as excluding promotions, the small-order fee, service fee, delivery fee, and tip; estimated total includes those amounts. The final total is the merchant-confirmed amount and includes promotions, the listed fees, and tip. This distinction is particularly relevant when an order involves a courier shopping or paying in store. For a dataset, retain both estimated and final values when available rather than overwriting one with the other; label which amounts are estimates and which are confirmed.
How to compare two delivery options fairly
- Match the context. Use the same platform, restaurant location, items, quantities, fulfillment mode, and observation window wherever possible. Record jurisdiction and distance when known.
- Compare menu prices first. Separate the delivery-menu item subtotal from pickup or in-store prices. If the items or menu basis differ, state the mismatch rather than calling the totals equivalent.
- Break out each charge. Compare delivery, service, small-order, long-distance, and other named fees separately, then compare tax, discounts, and tip. Keep membership eligibility and promotional terms visible.
- Distinguish estimate from final. Do not compare one platform’s estimated total with another’s confirmed total without labeling the difference. If a receipt later becomes available, retain both observations.
- Timestamp the result. Fee policies and promotions can change. Treat a captured price as an observation at a particular time, not a standing price.
This like-for-like method is a practical comparison approach, not a universal standard published by the platforms. It also avoids turning varied studies into a single misleading markup percentage. A 2026 FTC rulemaking notice summarized external reports alleging delivery costs nearly 80% higher in one cited study, and 25% to more than 90% higher in other cited reports; it also summarized reports of meal prices on delivery platforms being over 20% higher than restaurant prices. Those figures are attributed to outside work, not original FTC measurements, and the cited measures may differ in sample, date, geography, basket, and definition of cost. What the available figures do—and do not—show
Company-reported fee statistics describe the company’s own measures and samples, not the whole market. DoorDash reported that average consumer fees per order fell by more than 8% in 2022, in a company transparency post published in 2023. The official platform documentation is useful for understanding those platforms’ own fields, fee descriptions, and pricing qualifications, but it is not a neutral audit of consumer cost. There is no single independent, platform-wide figure in the cited sources that represents a typical delivery markup across all orders.
