Partly, but not in a way that lets us predict an individual’s sour sensitivity from a known gene. Twin research has reported heritable variation in sour perception, while genetic-association studies remain limited. Scientists have identified OTOP1 as a proton channel involved in sour-taste signaling, but that biological role does not show that common OTOP1 variants explain why one person finds lemon more sour than another.
How does sour taste work?
Acids release protons, which are a key stimulus for sour taste. In taste cells, the proton channel OTOP1 is involved in translating that stimulus into a signal. Heather N. Turner and Emily R. Liman’s 2022 review describes OTOP1 and the cells that respond to acid: The Cellular and Molecular Basis of Sour Taste.

That mechanism is distinct from the question of why people differ. Knowing which channel participates in sour signaling does not establish that inherited differences in the channel cause ordinary variation in how sour a food tastes. At sufficiently strong acid concentrations, oral sensations beyond taste can also contribute, so an intense response is not necessarily a measure of sour taste alone.

A review of taste-receptor genetics reports that human twin research has found heritable differences in sour perception, while noting that more work is needed to connect those differences to candidate sour-receptor genes (Genetics of Taste Receptors, 2016). Heritability means that genetic differences may contribute to variation in a studied group; it does not mean that genes alone determine an individual’s experience.

No population heritability percentage for sour perception is established in the sources cited here. The evidence supports a possible genetic contribution, not a numerical estimate of how much of any one person’s sensitivity is genetic.
Can a DNA test predict whether you are sensitive to sour?
The available evidence does not establish a reliable genetic test or specific variant that predicts an individual’s sour sensitivity. A 2019 systematic review counted four studies investigating associations between genetic polymorphisms and sour taste qualities. Those studies covered outcomes including responses to citric acid and perceptions of berries and wine; together, they did not establish a straightforward causal gene that predicts sour intensity (Genetic Background of Taste Perception, Taste Preferences, and Its Nutritional Implications).

That review’s count is a measure of the small body of studies it assessed, not proof that a genetic effect was found or a statistic about the population. Broader work on inherited chemosensory differences offers context for variation in perception and preference, but does not identify a validated predictor for sourness (Genetic Differences in Taste Receptors: Implications for the Food Industry, 2020).

Does liking sour food mean you taste it less intensely?
No. Perceived intensity and liking are different outcomes: how sour a food tastes does not, by itself, show how much someone enjoys it or what foods they choose. The limited genetic-association evidence on sour taste does not provide a reliable way to infer preference from a person’s genes or sourness ratings.

- IDENTIFY WHAT FOODS & DRINKS MAY BE CAUSING INTOLERANCE SYMPTOMS. Gluten and lactose intolerances occur when the digestive system struggles to process foods within those categories like milk and bread, but these intolerances can happen with any food or drink too. If your food intolerances aren’t handled properly, symptoms like acid reflux, constipation, diarrhea, headaches, and weight gain can occur.
- TESTS 1030 FOOD & BEVERAGE ITEMS. Your hair sample is compared against 30 food and drink categories, including acidity regulators, anti-caking agents, beverages, dairy, emulsifiers, fats, flavor enhancers, food dyes, fruits, grains, herbs, legumes, modified starches, mushrooms, nuts, preservatives, processing aids, proteins, seafood, seasonings, spices, stabilizers, superfoods, sweeteners, thickeners, and vegetables.
- NON-INVASIVE HAIR SAMPLE COLLECTION WITH FAST RESULTS. 1) Register your test kit on our 5Strands website or mobile app. 2) Collect 10-15 strands of hair from anywhere on your body. 3) Mail the sample to our certified U.S. lab with the included shipping materials. 4) We’ll send the results to your email and mobile app within 4 days of receiving your hair sample.

Each food item is categorized by 4 response levels so you have a concrete starting point to eliminate trigger foods, consume mid-level food triggers in moderation, and keep safe-listed foods in your current diet. Consistent implementation of your results gives your gut microbiome the space to rebalance, promoting proper digestion while alleviating symptoms.
- INDEPENDENTLY VALIDATED & PHYSICIAN RECOMMENDED. 5Strands is the only food intolerance test of its kind supported by independent third-party research. Every sample goes through a double-pass process in our U.S. lab to ensure accuracy, and our testing has helped over 345,000 people and pets uncover their food intolerances.
People can compare their reactions to foods, but a casual tasting is not a genetic test. Strong acids may also cause sensations beyond taste, which complicates comparisons based on especially sour foods.
