How to Use a Broiler Pan Safely for Even Browning

Use the broiler pan’s raised grid for drainage, follow your oven manual for rack position, and use a food thermometer instead of judging doneness by color.

Place food on the broiler pan’s raised grid, set the oven rack according to your appliance manual, and watch the food closely as it browns. The grid lets fat and juices drain into the pan, but browned surfaces do not prove food is safely cooked: check doneness with a food thermometer.

What the broiler pan and grid do

A broiler pan typically has a lower pan and a raised grid. Food sits on the grid while drippings collect below, allowing fat to drain away from the food. Whirlpool says this arrangement helps drain juices and reduce spatter and smoke; GE likewise notes that the grid lets fat drain from meat into the pan. Whirlpool’s broiling guidance and GE’s broiling tips describe the setup.

Set up the pan and choose a rack position

  1. Check your oven manual first. While the oven is cool, set the rack position recommended for the food. Rack positions, broil settings, door position and preheating instructions vary by appliance, so do not assume one position or door setting works for every oven.
  2. Put the grid in the lower pan and the food on the grid. Center the pan on the oven rack. Keep the grid uncovered so drippings can drain. Whirlpool permits lining the bottom pan with foil for easier cleanup, but advises against covering the grid with foil because that interferes with drainage. Follow your appliance manual if its instructions differ.
  3. Trim excess fat. Removing excess fat can help limit spattering. Slitting remaining fat along the edge can also help reduce curling.

The closer the food is to the broiler, the faster its surface can brown relative to its interior. Whirlpool advises starting with a lower rack position and adjusting as needed; it cautions that its top position can sear the outside rapidly while the inside remains rare. That is model-specific guidance, not a universal rack rule. Use your oven manual to choose the position for the food and your desired browning.

Broil carefully and turn food when needed

Stay nearby and watch the food as it cooks. If smoke becomes excessive, Whirlpool advises moving the food farther from the heating element. Use tongs to turn food when both sides need exposure; very thin cuts may not need turning. When turning or removing food, pull the rack out only to its stop, and take the pan out of the heated oven when you remove the food. Leaving it in the hot oven can bake drippings onto the pan.

Check doneness with a thermometer, not color

Surface browning is not a reliable safety test: food can look browned before its center is safely cooked. USDA FSIS says a food thermometer is the sure way to establish that food has reached a temperature high enough to destroy foodborne bacteria. Use the current USDA FSIS guidance for safe temperatures for the specific food rather than relying on appearance or an estimated broiling time.

Limit flare-ups and avoid charring

Excess fat can cause flare-ups, so trim visible fat before broiling. USDA FSIS advises cutting charred portions from food. It also says that, based on its present research findings, moderate amounts of meat, fish and poultry cooked without charring to a safe temperature do not pose a problem. See USDA FSIS’s explanation of grilling and cancer.
