For baked enchiladas, check the center with a food thermometer: it should reach 165°F (73.9°C). Bubbling sauce and melted or browned cheese are useful serving cues, but they do not prove the middle is hot enough for food safety.
What temperature should enchiladas reach?
USDA Food Safety and Inspection Service (FSIS) lists 165°F (73.9°C) for casseroles. Baked enchiladas are a combination dish, so use that temperature as the safety check. FSIS also recommends 165°F for casseroles and combination dishes in its guidance on doneness versus safety.

How to check the center
- Use a food thermometer and insert its probe into the thickest central portion of the pan. Avoid touching the pan or a bone, if the filling contains one.
- Wait for the thermometer to give a stable reading. The center should register at least 165°F (73.9°C).
- If the pan is dense or may have heated unevenly, check another central spot. Use the lower reading to decide whether it needs more heating.
For thermometer guidance, including use and care, see USDA FSIS’s food thermometer guidance.
Do bubbling sauce and melted cheese mean they are done?
They can show that the surface is hot and ready for the texture you want, but they cannot verify the center’s temperature. FSIS cautions that appearance and color are not reliable indicators of safety or doneness; a dish can brown before it is heated through. Treat visual cues as a guide to serving preference, not as a substitute for a thermometer reading.

How long should enchiladas bake?
There is no single baking time that guarantees doneness for every pan. Timing varies with pan size, oven temperature, filling temperature, and whether the dish went into the oven chilled. Follow the recipe’s oven setting and timing for its intended texture, then use the center temperature—not elapsed time or browning—to verify safety.

A refrigerated, make-ahead pan may brown on top before its center has heated through, so check the center rather than relying on its appearance. When reheating leftovers, FSIS says they should reach 165°F (73.9°C); measure in the thickest central portion.
