How to Store Winter Produce So It Lasts Longer

Winter produce lasts longer when each crop gets the temperature, humidity, curing, and airflow it needs. Here’s how to adapt extension guidance to a fridge, basement, or cellar.

Store winter produce by its needs, not by the season: many roots and leafy vegetables do best cold and moist, while onions and garlic need cooler, drier storage, and squash and sweet potatoes tolerate warmer conditions. A refrigerator, basement, or cellar can work, but no single spot suits every crop.

Choose storage by temperature and humidity

Temperature and moisture are the two main controls on storage life. Extension recommendations describe ideal postharvest conditions; a typical household refrigerator or basement may not match them, so treat the durations as targets rather than guarantees.

A typical refrigerator is about 40°F and 50–60% relative humidity: cold, but relatively dry. Many roots and leafy vegetables need cold, moist conditions. Perforated plastic bags can help retain moisture for suitable vegetables without trapping as much condensation as sealed bags. Excess condensation can encourage mold or bacterial growth.

A root cellar can provide cold, moist conditions. For basement or cellar storage, allow ventilation and protect produce from rodents. If the available space is warmer, drier, or less stable than the crop’s preferred conditions, expect shorter storage life and check produce regularly.

Compare common winter produce

The University of Minnesota Extension commodity table, reviewed in 2026, gives the following figures for ideal conditions. They are not promises of household storage life.

Produce Temperature Relative humidity Expected storage life Practical note
Apples 32–40°F 95% 2–6 months, depending on variety Keep cold; the table’s duration assumes ideal conditions.
Onions 40°F 50% 6–9 months Favor cooler, drier storage and cure before long-term storage.
Potatoes 40–50°F 95% Up to 12 months, depending on variety Cure before storage; keep in a dark location.
Sweet potatoes 60°F 95% Up to 12 months Warmer-storing than ordinary potatoes; cure before storage.
Butternut squash 53°F 50% 2–3 months Store cool and dry after curing.

These figures come from University of Minnesota Extension’s home-garden storage guidance and its postharvest handling table. Actual life depends on variety and storage conditions.

Prepare crops that need curing

Curing helps heal surface wounds and, for onions and garlic, dries the necks and outer skins. That can reduce pathogen spread and help produce keep longer. University of Minnesota Extension lists onions, garlic, pumpkins, winter squash, potatoes, and sweet potatoes as crops that need curing before storage. Methods differ by crop:

  • Onions: Cure at room temperature for two to four weeks before storage, according to the home-garden guide. Wait until outer skins and necks have dried.
  • Potatoes: Cure at 50–60°F for 14 days before storage, following the home-garden guide.
  • Winter squash and pumpkins: Cure until nicks and small cuts have scabbed over. Field curing may take 7–10 days in warm, rainless conditions; for indoor curing, circulate air around the produce. After curing, the postharvest guidance recommends storage around 50–55°F and 50% relative humidity.
  • Garlic and sweet potatoes: Cure before long-term storage; the extension source lists them among crops that need curing, but the cited household guidance does not give a specific curing duration for these crops.

For squash and pumpkins, the household guide describes a cool, dry location and a broad expected life of 2–6 months depending on variety. The more specific postharvest target is about 50–55°F and 50% relative humidity; a warmer or more humid home may not achieve that target.

Sort, store, and inspect

  1. Remove damaged produce first. Do not put soft, rotting, or unhealed produce into long-term storage with sound crops; damaged pieces can become a source of decay.
  2. Match the storage place to the crop. Use the refrigerator for produce that benefits from cold conditions. For suitable cold- and moisture-loving vegetables, use a perforated bag rather than a sealed one. Keep onions and garlic in a cooler, drier place, and reserve warmer, dry storage for cured squash and pumpkins.
  3. Keep potatoes dark. Store them away from light in a ventilated location that is within a workable cool range; the ideal table target is 40–50°F.
  4. Allow air movement in a cellar or basement. Avoid trapping damp air around produce, and protect stored crops from rodents.
  5. Inspect regularly. Remove any crop that develops soft spots or decay so it does not compromise nearby produce.

Why one storage plan does not fit every crop

Putting everything in the refrigerator is not a reliable rule. A refrigerator is cold and comparatively dry, roots and many greens need cold with more moisture, onions and garlic favor dry conditions, and sweet potatoes and winter squash have warmer targets. Even squash varieties differ in how long they keep. Use the ideal figures as a guide to relative needs, then adjust expectations to the temperatures and humidity your home can actually maintain.
