To scale a recipe, divide the yield you want by the recipe’s original yield, then multiply each ingredient by that factor. That gives you a sound starting point—not a new cooking time. Ingredient behavior, pan depth, mixing capacity, and doneness still need attention.
Calculate the scaling factor
Use servings or another stated yield, such as the number of portions. Divide the desired yield by the original yield, then apply that one factor to every ingredient as your first calculation.

For example, if a recipe makes 4 servings and you want 6, the factor is 6 ÷ 4 = 1.5. Multiply each ingredient amount by 1.5: 2 cups of broth becomes 3 cups, and 1 teaspoon of salt becomes 1½ teaspoons. Write down the adjusted quantities before you start cooking so you do not have to recalculate mid-recipe.

For a smaller batch, the same method works in reverse. To make 2 servings from a recipe for 4, use a factor of 2 ÷ 4 = 0.5 and initially halve each quantity.

Measure accurately, especially when converting units
When a recipe gives ingredient weights, use them. The National Institute of Standards and Technology (NIST) calls measuring by mass with an appropriate kitchen scale a best practice for improving recipe accuracy. A digital kitchen scale is particularly useful for scaling small amounts or portioning beaten egg.
Do not assume that a cup of every ingredient weighs the same. If you need to convert a U.S. customary volume to grams, NIST’s advice is to measure the ingredient in its original traditional measure and then weigh that amount; the conversion depends on the ingredient. Also check which cup or spoon standard a recipe uses: customary measures can differ internationally, and fluid ounces measure volume while dry ounces measure weight.

Handle ingredients that may not scale neatly
Eggs and fractional amounts
For part of an egg, beat it first, then measure or weigh the beaten egg and use the required fraction. Kansas State University’s October 2020 guide gives 2 tablespoons as an example of half a large egg. If halving a baking recipe leaves you with awkward quantities or an unreliable result, the guide suggests making the full amount and freezing portions instead.
Herbs and spices
For a savory dish, KitchenAid suggests initially adding less than the full scaled amount of herbs and spices, then tasting and adding more as needed. This is a practical rule of thumb from the manufacturer, not a formula that applies to every recipe. Keep the original proportions as your starting point and adjust cautiously.

Leaveners, thickeners, and baking formulas
Baking soda, baking powder, yeast, thickeners, eggs, and some liquids may not behave proportionally in every formula. The Minnesota Department of Education’s standardized-recipe guide says testing and evaluation are needed to establish suitable quantities. For a home recipe, do not apply a made-up universal correction; follow the recipe’s instructions and preserve its ratios unless you have a tested adjustment.
Liquids and evaporation
More ingredients do not always mean every liquid should be increased in exact proportion. KitchenAid uses rice pilaf as an example: doubling rice and water may not work as expected because a larger volume does not necessarily lose the same proportion of water to evaporation. The exposed surface area and shape of the pot affect evaporation, so use recipe- or package-specific guidance where available.

Choose cookware for the new batch size
Check that the bowl, mixer, pot, or pan can hold the scaled quantity and still let you mix it evenly. When changing pan size, try to preserve the food’s original depth. A larger batch in a deeper vessel may heat differently from the original, while a pan that is too full can overflow or make even mixing difficult.

If the equipment cannot handle the volume reliably, divide the mixture among suitable pans or prepare separate batches. KitchenAid recommends splitting batches when equipment or mixing limitations make a single large batch unreliable. In baking, distribute leavening thoroughly through the mixture.

Adjust your checks, not the clock by multiplication
Cooking time does not rise or fall in direct proportion to ingredient quantity. Start checking at the time stated in the original recipe, then check at short intervals using its doneness cues. Smaller portions may finish sooner; a deeper single dish may take longer. Several individual pans can be closer to the original timing than one deep, enlarged pan, but the recipe and oven determine the result.
For reduced baked goods, Kansas State’s October 2020 fact sheet advises keeping the oven temperature unchanged when using the same kind of pan. Its stated exception is glass or dark metal pans, for which it recommends reducing the temperature by 25°F to limit over-browning. Treat that as the guide’s advice rather than a universal rule for every recipe or oven, and begin checking a smaller batch early.
Check safe internal temperature when it applies
For foods that require a safe internal temperature, use a food thermometer rather than relying only on timing or appearance. USDA Food Safety and Inspection Service guidance notes that size, quantity, and distribution can affect heating; a scaled or rearranged batch may therefore reach its safe temperature at a different time. Follow the applicable safe-temperature guidance for the food.
