What kind of transfer do you need?
A cloud save within one platform ecosystem and a cross-platform save are different things. Steam Cloud is listed for the Steam version, while the Xbox Store lists cloud saves for the Vampire Crawlers demo. Neither listing documents a procedure for moving progress between different ecosystems.

How to protect progress when changing devices
If you are staying on Steam
Steam Cloud is listed for the game, so use the same Steam account on the new device and allow the platform’s cloud synchronization to operate. The published listing does not provide Vampire Crawlers-specific menu instructions or explain how to resolve a sync conflict, so do not assume that a manual copy or a particular overwrite choice is supported.
If you are staying on Xbox
The Xbox Store identifies cloud saves for the demo. That supports cloud-save availability for the demo listing, but it does not describe a step-by-step restore process or establish details for every version of the full game. Use the same Xbox account and consult current Xbox support guidance if the save does not appear.

If you are moving to another platform
Do not treat Steam Cloud or an Xbox cloud save as cross-save. poncle’s FAQ gives the launch-time answer as: “Not at launch, we’re looking into it on time for the mobile ports.” That wording records the status at launch and an intention, not confirmation that cross-save was later added. Check poncle’s current FAQ or announcements for an update before starting over or making a platform purchase.
Does the Steam demo save carry over to the full game?
Yes. poncle’s FAQ says that save data carries over on Steam from the demo to the full game. The FAQ does not give additional migration steps, so there is no supported basis here for prescribing a menu action or manual file transfer. See poncle’s FAQ.
