Then check the center and several other spots with a food thermometer: leftovers should reach 165°F (74°C). A hot or steaming surface alone does not confirm that the whole portion is safe.
Use this simple method for most leftovers
- Choose a suitable dish. For microwave reheating, transfer food to a microwave-safe glass or ceramic dish unless its package directions say otherwise.
- Arrange it for even heating. Spread food in an even layer when possible. Separate dense or thick portions so heat can reach the center.
- Cover the food. Use a microwave-safe lid or wrap, leaving a vent for steam to escape. For the oven, cover the dish to reduce moisture loss. FoodSafety.gov says covering leftovers retains moisture and helps food heat through (FoodSafety.gov guidance on Thanksgiving leftovers).
- Add a little liquid if it will help. A small splash of water, broth, or another suitable liquid can refresh foods that tend to dry out, such as rice, pasta, or meat. Avoid adding liquid to foods that should stay crisp.
- Heat, redistribute, and check. Stir or rotate midway through microwave reheating when appropriate, then let the food stand briefly. Check the temperature in several places, especially the thickest or coldest-looking area. Continue heating if any spot has not reached 165°F (74°C).
Microwaves can leave cold spots, so an evenly arranged portion, mid-cycle stirring or rotation, standing time, and checks in multiple places matter more than judging by steam. If the package gives specific reheating instructions, follow them; stirring is not suitable for every packaged food. FoodSafety.gov’s microwave and food-safety guidance also recommends stirring and standing time where appropriate.

Choose a reheating method that suits the food
No method is universally best for texture or speed. Portion size, thickness, density, starting temperature, and the food itself affect both heating time and evenness. Whichever method you use, verify the food’s internal temperature rather than relying on the appliance setting or a steaming surface.
| Method | How to help retain moisture | Evenness and checks | Best fit |
|---|---|---|---|
| Microwave | Cover with a vented microwave-safe lid or wrap; add a little liquid if useful. | Arrange evenly, stir or rotate midway when appropriate, allow standing time, and check several places for cold spots. | Many individual portions and foods that can be stirred or redistributed. |
| Oven | Cover the food or dish to limit moisture loss. | Use a food thermometer to confirm the internal temperature; the oven setting does not prove the food itself is hot enough. | Larger portions or dishes better suited to oven reheating. |
| Stovetop | Use a saucepan for liquid foods and stir as appropriate to distribute heat. | Check the food throughout rather than assuming a universal heating time. | Soups, sauces, gravies, and frozen soup or stew that can be reheated in a saucepan. |
Microwave
Use a microwave-safe dish, spread food evenly, and cover it with a vented microwave-safe lid or wrap. Add a small amount of liquid only if the food would benefit. Stir or rotate halfway through when suitable, let it stand, and check several areas with a thermometer. Follow package directions for packaged food, since they may call for a different approach.

Oven
Keep food covered while it reheats to help limit moisture loss. FoodSafety.gov advises an oven set no lower than 325°F for reheating meat and poultry; that is an oven-setting recommendation, not proof of the food’s internal temperature. Check with a thermometer and continue heating until the leftovers reach 165°F (74°C). See FoodSafety.gov’s restaurant-leftovers tips.
Stovetop
For soups, sauces, and gravies, bring the food to a rolling boil, as FoodSafety.gov advises. A saucepan is also an option for frozen soup or stew. For other foods, use portions that heat evenly and check the temperature throughout; the guidance does not establish one reliable cooking time for every dish.

Reheat frozen leftovers carefully
FoodSafety.gov says frozen leftovers can be reheated without thawing using appropriate methods. They will take longer to heat, so check the temperature in several places and make sure the whole portion reaches 165°F (74°C). Do not assume that a hot edge means a frozen center is ready.
Reheating cannot make improperly stored food safe
Temperature control starts before reheating. Refrigerate perishable leftovers within two hours of cooking or removal from hot holding—or within one hour when the surrounding temperature is above 90°F (32°C). Divide food into shallow containers to help it cool faster, and use refrigerated leftovers within four days. These limits come from FoodSafety.gov’s leftovers guidance; reheating does not undo unsafe storage.

For the reheating safety target, the agency’s safe minimum internal temperature chart lists leftovers of any type at 165°F (74°C); it was reviewed November 21, 2024.
