Strain plain non-fat yogurt in the refrigerator to remove some whey and create a thicker, fuller texture without adding dairy fat. If you want to keep all the yogurt, test a small amount of starch; chia seed mucilage can also increase viscosity, but it may add a noticeable gel or seed texture.
Why non-fat yogurt can seem less creamy
Creaminess is not only a flavor sensation. In yogurt, fat contributes to lubrication, body and the way the product holds water. Removing it can leave a weaker structure and make whey separation more noticeable. That is why a non-fat yogurt may taste sharper, feel thinner or look watery even when its acidity is otherwise acceptable.

None of the methods below restores the flavor contribution of dairy fat. They change water content, solids or viscosity so the yogurt feels fuller. The useful question is therefore not “How do I make it identical to full-fat yogurt?” but “Which texture change best fits what I am willing to add or remove?”
Method 1: Strain the yogurt to concentrate it
Refrigerated straining is the simplest approach and requires no additional ingredient. It removes part of the whey, leaving a denser yogurt with a Greek-style consistency. Because the whey is separated, the final amount of yogurt is smaller and its remaining solids are more concentrated.

What you need
- Plain non-fat yogurt.
- A clean fine-mesh strainer or yogurt strainer.
- A food-safe liner, such as clean cheesecloth or another liner intended for food contact.
- A bowl deep enough to catch the draining whey.
- Refrigerator space for the bowl-and-strainer setup.
Refrigerated straining steps
- Set the clean strainer over a bowl so the bottom of the strainer does not sit in the liquid that collects.
- Line the strainer with the food-safe material and spoon in the yogurt.
- Cover the setup and place it in the refrigerator. Keep the yogurt cold while it drains rather than leaving it at room temperature.
- Check the texture periodically and stop when it is thick enough for your use. There is no single drain time that works for every brand, starting consistency or desired result.
- Transfer the thickened yogurt to a clean container and stir gently if you want an even consistency.
How to judge the endpoint
Use a spoon to check whether the yogurt holds a soft mound, spreads slowly and looks smooth rather than watery. For a dip or spread, you may prefer more whey removal. For a bowl eaten with fruit, a shorter drain may preserve more volume and a softer texture. Taste as you go: straining changes tanginess and concentration along with thickness because whey has been removed.
Straining trade-offs
- Texture: Usually thicker and more substantial because free whey has been removed.
- Quantity: Some liquid is separated, so you finish with less yogurt than you started with.
- Flavor: The concentrated yogurt can taste more intense or tangy; straining does not add the buttery flavor associated with fat.
- Control: You can stop at a spoonable thickness instead of committing to a fixed recipe.
The method is particularly useful when you object to extra ingredients or when visible particles would be distracting. A dedicated fine-mesh strainer is optional; an appropriate clean food-safe liner and strainer are sufficient.
Method 2: Use starch to build firmness
Starch can bind water and increase firmness, which may make non-fat yogurt seem smoother and less prone to whey separation. A 2019 study, “Effect of Different Starches on the Rheological, Sensory and Storage Attributes of Non-fat Set Yogurt,” reported that a treatment containing 1% starch significantly reduced syneresis (whey separation) and improved firmness.

It is not a universal household dose for every commercial yogurt, starch source or serving size. Different starches behaved differently in the study, and the result should be treated as evidence that starch can work—not as a guaranteed kitchen formula.
A cautious way to test starch at home
- Reserve a small portion of the yogurt rather than modifying the entire container.
- Choose a plain starch you are comfortable using and add only a very small amount at first. The study’s 1% treatment is a research reference, not a target you must reproduce.
- Mix thoroughly so the starch is distributed instead of forming pockets.
- Allow the test portion to stand under the same refrigeration conditions you normally use, then evaluate its thickness and mouthfeel.
- If it is still too thin, make a second small test with a slightly larger addition. Stop if the texture becomes pasty, chalky or obviously starchy.
Starch works best when your main complaint is weak body or whey separation and you want to keep the original volume. It is less suitable if you are very sensitive to a cooked, powdery or paste-like sensation. The amount, starch type and how it is dispersed all influence the result; do not assume that the percentage used in one study will behave the same way in your refrigerator.

Method 3: Try chia seed mucilage
Chia mucilage is the gel-forming material released when chia seeds hydrate. In a skimmed-yogurt study titled “Chia (Salvia hispanica L.) seed mucilage as a fat replacer in yogurts,” a formulation containing 7.5% chia seed mucilage increased consistency, firmness and viscosity. The study’s sensory results were similar to reference samples for acidity, creaminess and viscosity.
The 7.5% level was a specific research formulation in skimmed yogurt. It should not be presented as an established home recipe, and it does not mean that stirring an arbitrary amount of whole chia seeds into any commercial tub will produce the same result.

- More gel-like body: Hydrated mucilage binds water and can make the yogurt feel thicker.
- Visible texture: Whole chia seeds remain noticeable and can add a gel or seed sensation rather than a perfectly smooth creaminess.
- Ingredient preference: Chia may suit you if a plant-based texture aid is acceptable, but not if you want the ingredient list or appearance to remain unchanged.
- Testing requirement: Start with a small portion and increase gradually rather than applying the study percentage directly to a full container.
Use chia only when you are comfortable with the possibility of a perceptible gel. If your priority is a smooth, uniform yogurt, refrigerated straining or a carefully tested starch approach is easier to control.
Method 4: Increase non-fat solids or protein
Non-fat milk solids or another non-fat protein ingredient can increase the total solids available to form yogurt structure. This approach may strengthen body without adding dairy fat, but it can also change flavor and mouthfeel. The available evidence does not establish a home dose for adding non-fat milk solids or protein to a finished yogurt, so do not treat it as a measured recipe.
If you test this option, modify only a small portion, mix completely and compare it with an unmodified sample. A thicker result is not automatically a creamier one: added solids can make yogurt feel dense, powdery or overly concentrated.

Method comparison
| Method | What changes | Main trade-off | Best fit |
|---|---|---|---|
| Refrigerated straining | Removes whey and concentrates the yogurt | You lose some whey and final volume; drain time varies | You want a smooth, ingredient-free thickening method |
| Small starch addition | Builds firmness and can reduce whey separation | Too much may feel pasty; starch sources do not behave identically | You want to retain volume and address weak body |
| Chia or chia mucilage | Adds viscosity and water-binding gel structure | Seeds or gel may be visible and noticeable; the study level is not a home prescription | You accept a plant-based, potentially textured thickener |
| Non-fat milk solids or protein | Raises total solids and may strengthen structure | Can alter flavor and mouthfeel; no home dose is established here | You are willing to test a solids-based formulation in small batches |
Choose by the result you want
For the smoothest result with no added ingredient
Strain the yogurt in the refrigerator and stop as soon as it reaches the body you want. This avoids particles and avoids the risk of a starch-heavy mouthfeel, but it sacrifices some whey and volume.

For less whey separation while keeping the original amount
Run a small starch trial. The 2019 non-fat set-yogurt study supports improved firmness and reduced syneresis with a 1% treatment, but your kitchen test must account for the starch type and the yogurt you actually have.
For a deliberately gelled, plant-based texture
Test chia mucilage or hydrated chia in a small portion. The skimmed-yogurt study found useful consistency and viscosity changes at 7.5% mucilage, while also showing why the study formulation should not be copied blindly into a household tub.
When changing the amount is acceptable
Choose straining if reducing the final quantity is not a problem. The method concentrates the yogurt rather than disguising whey with a thickener, so it is often the most predictable route to a dense spoonable texture.
A controlled tasting test that prevents wasted yogurt
Because there is no direct consumer head-to-head trial establishing one winner among these home methods, compare them under the same conditions. A simple side-by-side test reveals whether “thicker” actually means “creamier” to you.

- Divide the same plain non-fat yogurt into equal small portions.
- Leave one portion unchanged as a control.
- Strain one portion in the refrigerator until it reaches your chosen consistency.
- Use separate small portions for any starch, chia or non-fat-solids test. Do not add every thickener to one sample, because you will not know which change caused the result.
- Keep the portions cold for the same length of time before tasting.
- Evaluate each sample for smoothness, thickness, tanginess, visible texture, ingredient preference and whether losing whey is acceptable.
- Choose the method that improves the specific quality you care about, not merely the sample that is hardest to stir.
Record what you changed, even if the test is informal. A method that works with one yogurt can behave differently with another because starting solids, cultures and manufacturing process vary.

The yogurt is still too thin after straining
Continue refrigerated draining and check it periodically. Starting yogurt and the desired consistency determine how long it takes, so a fixed universal time would be misleading. Make sure the strainer is not sitting in collected whey; contact with the drained liquid slows effective separation.
The yogurt became too tangy or concentrated
That is a consequence of removing whey and concentrating the remaining yogurt. Stop draining earlier next time, or use a small starch test when preserving the original volume matters more than concentration.
The thickener feels pasty or starchy
You likely added more starch than the yogurt can accommodate comfortably, or the chosen starch behaves differently from the one used in the study. Compare it with an unmodified sample and reduce the amount in the next small test. Reviews of hydrocolloids and starches consistently caution that excessive thickener can damage texture.

Starch can reduce syneresis in non-fat set yogurt, but the 1% research result is not a guarantee for a finished commercial product. Stir gently, test a small amount of starch separately and avoid assuming that every starch has the same water-binding effect.

Chia makes the yogurt visibly lumpy or gel-like
That is an expected trade-off of whole seeds or incompletely dispersed mucilage. If you want a smoother appearance, use refrigerated straining or a carefully measured starch trial instead.
The result is thick but not creamy
Thickness and creaminess are different. A sample can be firm yet feel dry, pasty or grainy. In your comparison, score smoothness and lubrication separately from firmness; then select the method that improves the sensation you actually want.
What the evidence does—and does not—establish
The practical evidence supports three distinct mechanisms: straining removes whey; starch builds firmness and can limit syneresis; and chia mucilage binds water and raises viscosity. The named experimental percentages—1% starch and 7.5% chia mucilage—come from particular formulations, not universal serving instructions.
The studies do not establish a single drain time, a guaranteed starch dose for every yogurt, or a standard amount of whole chia seeds to stir into a supermarket container. They also do not provide a direct consumer head-to-head ranking of these home methods. Treat the percentages as useful context for small, cautious trials rather than promises about your exact product.
Practical decision
Start by straining plain non-fat yogurt in the refrigerator if you want the most straightforward, smooth thickening without adding dairy fat or another ingredient. If preserving volume is more important, test starch gradually in a small portion, using the 1% non-fat set-yogurt finding as research context rather than a mandatory recipe. Consider chia mucilage only when a gel-like or seed texture is acceptable, and treat non-fat milk solids or protein as an experimental solids-building option because no home dose is established.
