To make Dock icons smaller, open Apple menu > System Settings > Desktop & Dock and drag the Size slider to the left. To remove an app from the Dock without uninstalling it, drag its icon out of the Dock until Remove appears, then release; the app stays on your Mac.

Adjust magnification separately
If icons enlarge when the pointer moves over them, look for Magnification in the same settings panel. Turn it off or reduce its slider. Size changes the Dock’s overall size; Magnification controls the pointer-hover effect.

Resize without opening Settings
Move the pointer over the Dock’s separator line until it becomes a double arrow, then drag to resize. Apple describes this alternative in its desktop and Dock guide.
Make the Dock take up less screen space
In System Settings > Desktop & Dock, you can also move the Dock to the left or right edge of the screen, or enable automatic hiding so it appears only when needed. These options change its position or visibility rather than the icon size.

Remove an app from the Dock but keep it installed

Drag the app’s icon out of the Dock.

Release it when Remove appears.
This removes only the Dock shortcut; it does not uninstall the app. To put the app back, open it, Control-click its Dock icon, then choose Options > Keep in Dock. Apple explains these Dock actions in its Dock guide.
Clear a question-mark icon
If an app has already been deleted but its Dock icon remains with a question mark, drag that icon out of the Dock and release when Remove appears. This clears the stale shortcut; Apple’s question-mark Dock icon guide covers this case.

Uninstall the app itself
Uninstalling is different from removing an icon. For a third-party app, quit it, locate it in Finder, and check first for an uninstaller or removal feature supplied with the app. Apple recommends using that option when available because related login items, extensions, or other data may be stored outside the app itself.
If there is no uninstaller, move the app from Finder to the Trash. Empty the Trash to permanently delete it. Apple notes that some apps installed with macOS, and items in the System folder, cannot be deleted this way. Its app deletion and uninstallation instructions explain the process.

Choose the right kind of removal
