How to Keep Food Cold Safely in a Cooler for a Weekend Trip

A safe weekend cooler starts with cold food, ice or frozen gel packs, careful packing, and temperature checks—not a promised number of hours.

Keep perishable food at or below 40°F (4°C) from packing through serving. Chill it before you leave, surround it with ice or frozen gel packs, and use a food thermometer to check the cooler rather than assuming it will stay cold for the whole weekend. Discard food that has been above 40°F for more than two hours—or more than one hour when the outdoor temperature is above 90°F.

Pack the cooler to preserve cold and prevent contamination

  1. Chill the food first. Refrigerate or freeze food before packing, and leave it in the refrigerator until departure. Take only what you need. Meat, poultry, and seafood can be packed frozen when practical; frozen items stay colder longer. (USDA FSIS; FDA)
  2. Arrange cold sources around the food. Use ice, block ice, or frozen gel packs around the chilled items. USDA says block ice keeps food colder longer than ice cubes, but its guidance does not give a guaranteed duration or a universal best combination. Keep food that could be contaminated by meltwater in watertight containers.
  3. Separate raw meat from ready-to-eat food. Seal raw meat or poultry and place it below ready-to-eat items so juices cannot drip onto them. Use a separate cooler for raw items if that makes separation easier. Pack food in the order you will use it, with later meals at the bottom or back, to avoid exposing them during early access.
  4. Limit heat and openings. Keep the perishable-food cooler closed and in the shade; cover it with a blanket, tarp, or other insulating cover where practical. If drinks or snacks will be reached for often, keep them in a separate cooler. Repeated opening brings in warm air and melts ice faster. (USDA FSIS; USDA FSIS)

How much ice do you need for a weekend?

There is no universal ice quantity or guaranteed weekend duration for a given cooler. How long food stays safe depends on the cooler, the amount and starting temperature of the food and cold sources, access frequency, and surrounding heat. The practical measure is the food’s temperature: keep it at or below 40°F (4°C), and do not treat the cooler’s appearance or remaining ice as a substitute for checking temperature.

Choose the cold source to suit the load. Block ice retains cold longer than ice cubes according to USDA; gel packs are another recommended option. You can use more than one type, but the guidance does not promise a particular combination will last a set number of hours. A food thermometer helps you make a decision based on temperature instead of an assumed ice-to-food ratio.

One cooler or separate coolers?

Approach When it fits Trade-off
One cooler for food and drinks When space is limited and the cooler will not be opened often. Frequent drink access lets warm air in and can melt ice faster.
Separate perishable-food and drinks coolers When drinks or snacks will be accessed repeatedly. Requires more cooler space, but keeps the food cooler closed more often.

Whichever arrangement you choose, keep the perishable food shaded and its cold sources in place. A second cooler is most useful when it reduces openings of the food cooler.

When to discard food

The danger zone is 40°F–140°F. FDA and USDA guidance says perishable food should not remain above 40°F for more than two hours, or more than one hour when outdoor temperatures are above 90°F. If it has exceeded the applicable limit, discard it; do not taste food to decide whether it is safe. (FDA; USDA FSIS)

USDA’s camping guidance also says to discard perishable foods after the trip if no ice remains or a gel pack is no longer frozen. (USDA FSIS)

Keep raw food safe and cook it properly

Keep raw meat and poultry sealed and separate from ready-to-eat foods throughout transport and handling. Wash hands and keep food-contact surfaces clean when preparing meals. For cooking outdoors, use a food thermometer to check that food reaches a safe internal temperature; cooler temperature and cooking temperature are separate safety checks. (USDA FSIS)
