Keep refrigerator and freezer doors shut, check temperatures with appliance thermometers, and move refrigerated perishables to a cooler with ice if an outage may outlast the refrigerator’s roughly four-hour closed-door window. After power returns, use the official food-by-food chart to decide what to keep or discard; never taste food to check its safety.
Prepare before the power goes out
A little preparation makes it easier to protect food and judge what is safe later. FoodSafety.gov recommends keeping refrigerator and freezer thermometers in place so you can check conditions during and after an outage.

- Keep the refrigerator at or below 40°F (4°C) and the freezer at or below 0°F (-18°C).
- Freeze water containers and gel packs ahead of time, and keep ice-making or ice-purchasing options in mind.
- Freeze refrigerated food you can spare until needed, such as leftovers, milk, meat, and poultry. Group freezer food together.
- Have a cooler ready if an outage may last longer than four hours. For a prolonged outage, identify local sources of block ice or dry ice in advance.
- Include a three-day supply of emergency food and water in your household plan, including provisions for pets and people with special dietary needs.
FoodSafety.gov’s disaster and emergency food-safety guidance covers preparation and temperature targets.

FoodSafety.gov’s central advice is: “Keep the refrigerator and freezer doors closed as much as possible to maintain the cold temperature.” Opening doors lets cold air escape, so check only when necessary.

| Appliance or storage | Planning estimate | What to do |
|---|---|---|
| Closed refrigerator | About 4 hours | If the outage may last longer, move refrigerated perishables to a cooler with ice or frozen gel packs. |
| Closed, full freezer | About 48 hours | Keep the door shut and group food together. |
| Closed, half-full freezer | About 24 hours | Keep the door shut; the shorter estimate reflects less frozen food holding the cold. |
| Cooler with ice or frozen gel packs | No fixed duration stated by FoodSafety.gov | Use a thermometer and add ice as needed to keep food at or below 40°F (4°C). |
The refrigerator and freezer durations are approximate closed-door planning estimates, not guarantees for every appliance, room temperature, or pattern of use. For a longer outage, transfer refrigerated perishables to a cooler and use a thermometer to confirm the food remains at or below 40°F (4°C). Do not use outdoor snow or fluctuating outdoor conditions as a refrigerator: food can be exposed to animals or unsanitary conditions.
Using dry ice for a prolonged outage
FoodSafety.gov gives a planning figure of 50 pounds of dry ice to keep an 18-cubic-foot fully stocked freezer cold for two days. This is not a universal performance guarantee. Follow current handling instructions and do not place dry ice in direct contact with food. See FoodSafety.gov’s emergency food-safety page for its guidance.

When power returns, assess food individually
Do not taste food to decide whether it is safe. Smell, appearance, and texture cannot reliably establish safety. Use temperature and time information, then check the official FoodSafety.gov power-outage food chart, last reviewed August 8, 2024.

- Discard refrigerated perishables that have been above 40°F (4°C) for two hours or more. If the surrounding temperature is above 90°F (32°C), the limit is one hour.
- If refrigerated food stayed within safe conditions and the outage lasted no more than about four hours with the door closed, it may remain safe; use the chart and any temperature evidence you have.
- Frozen food that still has ice crystals or is at or below 40°F (4°C) may generally be refrozen or cooked, though quality may suffer. Follow the chart’s category-specific exceptions: softened ice cream and frozen yogurt should be discarded.
- If you do not know the freezer temperature, check for ice crystals and whether packages feel as cold as refrigerated food, then consult the chart.
The chart’s outcomes vary by food. Meat, poultry, seafood, leftovers, many cooked dishes, and some dairy foods may need to be discarded after unsafe temperature exposure; some shelf-stable condiments, whole vegetables, and hard cheeses may be kept. Do not assume one food’s rule applies to another—check the chart for each item.
