Freeze cooked enchiladas promptly, then reheat them until the center and several other spots reach 165°F (74°C). You can thaw them first or, as a casserole-style leftover, reheat them straight from frozen in the oven or microwave. Use a food thermometer rather than a fixed cooking time: official guidance does not give an enchilada-specific reheating schedule.
How to freeze cooked enchiladas
- Get leftovers into cold storage promptly. Refrigerate or freeze cooked enchiladas within 2 hours of serving, or within 1 hour if they have been exposed to temperatures above 90°F. Keep the refrigerator at 40°F or below and the freezer at 0°F or below. FoodSafety.gov’s storage guidance gives these limits.
- Portion into shallow containers. Shallow containers help food cool quickly. Enchiladas can go directly into the refrigerator; do not leave them out to reach room temperature first. See FoodSafety.gov’s leftover guidance.
- Freeze in a suitable food-storage container. The cited government guidance does not specify a particular wrapping material or an enchilada-specific freezing technique, so choose a container appropriate for freezer storage and close it securely.
Frozen food kept continuously at 0°F remains safe indefinitely, although quality can decline over time. The cited guidance does not establish a best-quality freezer duration specifically for enchiladas. USDA FSIS explains safe leftover storage and refreezing.

Choose how to thaw or reheat them

Reheat enchiladas in the oven
- Heat the oven to at least 325°F. This is the oven setting specified by USDA FSIS, not the temperature the food itself must reach.
- Place the enchiladas in an oven-safe dish. If reheating from frozen, allow additional time; no official enchilada-specific duration is established.
- Check the food with a thermometer in several places, including the center. Continue heating until all checked areas reach 165°F (74°C).
Reheat enchiladas in the microwave
- Arrange the enchiladas in a microwave-safe dish and cover them.
- Heat, then rotate the dish or stir where practical once or twice during reheating to address uneven heating. Allow a standing time after heating.
- Check several places with a food thermometer. If any area is below 165°F (74°C), continue heating and check again. FoodSafety.gov lists 165°F as the safe temperature for leftovers of any type.
Storage and refreezing after thawing
Once leftovers have thawed in the refrigerator, USDA FSIS says to use them within 3 to 4 days or refreeze them. Refreezing may affect quality. For food safety, keep frozen enchiladas at 0°F or below; safe storage does not guarantee the same quality over time. USDA FSIS has further information on leftovers and refreezing.
